    The secret behind Bulgari Resort Dubai’s two Michelin restaurants

    General Manager of Bulgari Resort & Residences Dubai, Pep Lozano shares how Bulgari Resort Dubai is now a destination driving travel in its own right, with two Michelin stars awarded to Il Ristorante and one Michelin star to Restaurant Hōseki.
    HŌSEKI BY CHEF SUGIYAMA

    Hōseki offers a unique Omakase experience with just nine seats – was this the plan from the outset?
    Yes, it was always the plan to have just nine seats. The reason behind this was to ensure we could tailor the exchange between the Chef and the guest, all while serving other guests at the same time. Nine seats allowed Chef to do so and serve guests with a spirit of wa, meaning harmony, without jeopardising any of the aspects that make for a perfect Omakase. Think of Omakase as chef inviting you to his home – everything is up to him. This once in a lifetime encounter needs to be perfect and as Chef Sugiyama and his staff put their hearts and souls into the service, limiting seating capacity ensures that the Chef does so.
    The restaurant has been awarded one Michelin star by The Michelin Guide for two consecutive years since 2022 and the 26th best restaurants on the World’s 50 Best Restaurants, Middle East & North Africa 2023. How does it feel to accomplish this title?
    I think that achieving this title is a proof of Chef Sugiyama’s gratitude to his guests, to Bulgari Resort Dubai, to his staff, suppliers, and Japanese producers who have been involved in the project since its inception. With or without this title, Sugiyama’s passion for cooking remains the same. Never satisfied with things as they are, Hōseki constantly tinkers, always searching through trial and error for a better version of itself.
    The fresh prime ingredients are imported directly from Japan. How does this further add to the quality of the food?
    Sugiyama goes to great lengths to ensure that everything at Hōseki is made in Japan, from the fish, vegetables and salt to the tableware. Fresh products are flown in from Japan several times a week – it’s just like visiting Tokyo’s Toyosu Market. Since Dubai is five hours behind Japan, when the restaurant closes at midnight, it’s 5AM in Japan. That’s just when the market is taking a breather. Dubai’s location is perfect. All the producers are personal contacts from his years working in Japan, people who work with him because they know and trust him. When the carefully selected ingredients are gathered from all over Japan, they are loaded onto containers headed for Hōseki. Chef Sugiyama wants his guests to have a piece of Japan, the moment they walk into the restaurant.

    Chef Sugiyama is a sixth-generation sushi master. Talk us through his career and background.
    Chef Sugiyama is the son of a sushi chef, owner of a long-established restaurant founded in 1865. His paternal and maternal grandparents all owned sushi restaurants. Yet as a young boy, he did not see himself continuing that family tradition. Both parents worked from morning to evening, and even on days off they always answered the phone if it rang. Not for a single day could work and home life be separated. Seeing at first hand the grinding hardship of running one’s own business, Sugiyama simply didn’t see becoming a sushi chef as an option. One day, Sugiyama had the opportunity to serve a customer a dish he’d prepared himself. When he saw the customer smile upon tasting his cooking, Sugiyama knew that this was what he wanted to do. Seeing the moment when a customer smiles on eating his food is the true thrill of counter service. It wasn’t long before Sugiyama reconnected with sushi. Later, after working at a series of sushi shops in Tokyo, Sugiyama had the good fortune of beginning his apprenticeship at Sushi Kanesaka. Then in 2017, when Bulgari Resort Dubai opened, Sugiyama was presented with an enthusiastic offer and set off for Dubai.
    What’s next for Hōseki by Chef Sugiyama?
    While the path to sushi might look very simple, it is a very complicated and difficult one. Chef Sugiyama considers that he’s still on the way to the best version of Hōseki. He aims to do better and work harder every day in order to provide a unique experience to his guests.

    The restaurant echoes the elegant design of the original Bulgari Hotel Milano – what are the design elements that correlate to its original design?
    The design elements of Il Ristorante-Niko Romito’s are a celebration of Italian heritage. The décor is designed in a purely Italian – Roman Baroque – style. The restaurant showcases framed iconic Bulgari archive photographs and brand heritage images that recall over 130 years of Roman jewellery history. It is an intimate space centered around one ethos: the integration of Italian soul, coupled with Bulgari’s superior approach to luxury. You will find the same at Bulgari Hotel Milano’s Il Ristorante. For instance, the oval-shaped Bulgari Bar is found at both outposts and was inspired by the famous Fontana Della Barcaccia, just a stone’s throw away from Bulgari’s Roman boutique. It doesn’t get more Italian than that. The menu celebrates the rich heritage of history.
    What are the key stand out dishes?
    The key standout dishes are definitely some that represent the most historical dishes inItalian heritage. I would probably recommend starting with an Antipasto all’italiana, which offers a variety of Italian regional specialties, an interesting gastronomic tour from the North to the South of the country. Then I would go for one of our homemade pasta, like the Spaghetti e pomodoro, a modern interpretation of the classic pasta with a hard preparation behind it. It’s a dish that takes inspiration from Reale, Chef Niko’s three-starred restaurant in Abruzzo. Finally, I would recommend either a Cotoletta, to try our version of this very well know Italian classic. To end the dinner, the tiramisu or one of the seasonal creations like the buffalo stracciatella cheese ice cream, balsamic vinegar and wild blackberries.
    Many of the top-quality ingredients are flown in from Italy. How does this add to the experience?
    We try to always use Italian ingredients and when importing them is not possible we work with the finest local producers and choose the best products the country can offer. We always look for the best raw materials and treat them with the utmost respect. We really want our guests to experience a piece of Italy and while we strive to work with more local products, there are certain ingredients that just cannot be replaced yet. Dubai is very set up regarding the import of outstanding quality products, given the fact that the city is positioned close to Europe and the rest of the world. It’s really all about bringing Italian excellence to Dubai and we do that with all of the strong research that goes into every dish.

    The simple dishes add a series of complex transformation techniques – tell us more.
    Il Ristorante-Niko Romito is a beautiful international project designed for the Bulgari Hotel worldwide. A lot of what Chef Niko does is embodying a code of Italian cooking that starts from the classics and is reinterpreted in a contemporary manner, expressing the cultural importance, elegance and essence. Seasonality plays a big role in the conception of the menu, and of course the elements of each season are present in the menus at Il Ristorante-Niko Romito. New dishes are introduced to the menu each month, keeping in perfect harmony with the Italian seasons and linked to Italian traditions from the North to the South. Additionally, we don’t conceive a dish stating we want to do a dish of Mozzarella and Tomato, for example. We start working on giving the identity to the main ingredient we want to focus on. In this case, let’s work with the Mozzarella. Ingredients can be so versatile depending on the temperature, its environment, by a treatment. Once we understand the best way to bring this ingredient to life, we try to play around it.
    What’s next for Il Ristorante-Niko Romito?
    We will continue to provide excellence of food and service. We are now recognised in the MICHELIN Guide for a second time in a row, being one of the very few to have received this remarkable recognition of two stars. We will of course continue to strive to provide the best Italian experience there is and express the cultural importance of Italian cuisine. Our menu is a declaration of love to Italy and we will continue to express it through all our reinterpretations.

    UAE public sector residents will have a long weekend next week

    If you’re thinking of planning a short escape, next week might be the perfect opportunity to do so.
    The UAE government has announced the date for the Islamic New Year holiday for federal employees. Friday, July 21, will be a holiday for those who work in the federal government, on the occasion of the Hijri New Year.
    The Ministry announced today that the holiday marks the start of the Islamic year 1445, will result in a day off for public sector workers.
    Per, The Emirates Astronomy Society (ESA), the new Hijri year (Muharram 1) is likely to be on Wednesday, July 19.
    However, the dates can be changed based on when the crescent moon is spotted.
    When is the next long weekend?
    The next public holiday after New Year is just over two months away as Prophet Mohammed’s birthday falls on Friday, September 29, which also gives people a long weekend.

    Executive Chef at Address Grand Creek Harbour on his culinary journey and future vision

    Meet Shokry Abouelsoud, the exceptional culinary mastermind leading the team at Address Grand Creek Harbour.
    With extensive international experience and a passion for gastronomy, Chef Shokry brings a wealth of knowledge to his role as Executive Chef at this prestigious 5-star property. Having obtained a Diploma in Hospitality from the Australian Skills Management Institute and honing his skills over a decade-long career, he has worked with renowned hospitality brands to create culinary masterpieces that showcase his creative flair.
    In an exclusive conversation with Emirates Man, Chef Shokry talks about his culinary journey so far and what’s his vision for this new haven by Address.
    What inspired you to become a chef, and how did you develop your culinary skills?
    My journey as a chef began at a young age when I developed a passion for cooking and a goal of mastering my craft. For me, being a chef is not just a profession, but a deeply rooted passion and a platform for creativity. There is no greater joy than seeing the satisfaction on the faces of my guests when they indulge in the culinary creations I’ve carefully crafted. Over the years, I have honed my culinary skills through continuous learning, experimentation, and dedication. It’s a constant process of refining my techniques, exploring new flavours, and expanding my culinary knowledge.

    Can you describe your creative process when developing a new dish or menu?
    The creative process behind developing a new dish or menu is a fascinating and ever-evolving journey. Becoming an executive chef or even a sous chef doesn’t happen overnight; it requires years of hard work and experience in the kitchen. While creativity is an exciting aspect, it is essential to have a solid foundation of culinary knowledge and methodology. Understanding the intricacies of cooking various dishes and mastering the techniques is crucial to gain confidence in the kitchen. Once that knowledge and precision are in place, it enhances my creativity. I draw inspiration from different cuisines, ingredients, seasonal produce, and cultural influences to create dishes that are both innovative and harmonious in flavour.
    How do you balance the need for consistency and innovation in your cooking?
    Maintaining a balance between consistency and innovation is never a challenge in a cosmopolitan city like Dubai. The clientele here is incredibly receptive to new culinary trends, and my team shares the same spirit of adaptability. While consistency is important to uphold high standards of quality, innovation allows us to continuously surprise and delight our guests. By infusing new ideas and flavours into our culinary creations, we ensure that our menu stays fresh and exciting. This balance between consistency and innovation keeps our guests intrigued while maintaining their trust in the culinary experiences we offer.

    Tell us about your journey as a chef and how did it begin?
    From a young age, I always felt my palate was different to others. My unique skill for enhancing well-known foods with subtle tweaks set me apart early on. Even as I began experimenting with my first simple dishes, I couldn’t settle for mediocrity. If a meal failed to satisfy me, I instinctively sought ways to elevate its flavours and transform the overall dining experience. This passion for culinary excellence grew with me, and I pursued formal training and education to refine my skills. Through hard work, dedication, and a pursuit of excellence, I climbed the ranks in the culinary world, taking on various roles and responsibilities. Each experience shaped me as a chef, instilling in me the values of discipline, creativity, and a deep understanding of the art of gastronomy.
    Can you share your philosophy on sourcing ingredients and supporting local farmers and producers?
    At Address Grand Creek Harbour, we hold transparency in the highest regard when it comes to sourcing ingredients. We want our guests to know that sourcing the best products goes beyond conforming to certification processes. We prioritise building strong relationships with the best suppliers and producers, both in the UAE and overseas, to ensure that we have access to the freshest and highest-quality ingredients. Supporting local farmers and producers is of utmost importance to us as it fosters a sense of community and contributes to the sustainability of the local food industry. By championing responsible sourcing practices, including at our new weekly Sparkling Thursday where we source our oysters from Dibba Bay, we can provide our guests with exceptional culinary experiences while making a positive impact on the environment and the local economy.

    What is your approach to pairing flavours and creating harmonious combinations in a dish?
    When it comes to pairing flavours, I believe in achieving a delicate balance rather than overpowering the palate. My approach revolves around harmonising flavours and textures to create a memorable dining experience. Each ingredient is carefully chosen to complement and enhance the others, resulting in a symphony of tastes that dance on the taste buds. By considering the interplay of sweet, salty, sour, bitter, and umami elements, I strive to create dishes that are well-rounded and pleasing to all senses. It’s about creating a culinary journey where each bite unfolds a new layer of intrigue and delight.
    How do you adapt your cooking techniques to accommodate dietary restrictions or preferences?
    Accommodating dietary restrictions and preferences is a vital aspect of providing an inclusive dining experience. We approach this challenge with both specified techniques and a readiness to offer alternative ingredients. Through meticulous menu planning and the expertise of our culinary team, we ensure that guests with specific dietary restrictions can still indulge in a satisfying meal. By staying updated on the latest dietary trends and alternative ingredients, we can cater to a wide range of preferences without compromising on taste or quality. At The Restaurant, we pride ourselves on offering a diverse range of vegetarian and vegan dishes, catering to the preferences of all our guests. Additionally, for health-conscious individuals and gym-goers, we provide a nutritious assortment, including a specially designed breakfast with options like our unique Acai machine, allowing guests to craft their own refreshing acai bowls. It’s all about going the extra mile to ensure that every guest leaves our hotel with a smile on their face.

    What are some of the challenges you’ve faced in your culinary career, and how did you overcome them?
    In the life of a chef, numerous challenges arise, but two key factors have helped me overcome them: time management and optimism. The culinary industry demands long hours and relentless dedication, particularly during high-production periods. To navigate these challenges, I prioritise effective time management, ensuring that tasks are organised and delegated efficiently. Additionally, I approach each challenge with optimism, seeing it as an opportunity for growth and learning. By maintaining a positive mindset and fostering a resilient spirit within my team, we overcome challenges together and emerge stronger, continually striving for excellence.
    How important is presentation in your dishes, and how do you strike a balance between aesthetics and taste?
    Presentation plays a crucial role in the culinary experience we offer at Address Grand Creek Harbour. In today’s visually driven world, the aesthetic appeal of a dish is essential in capturing attention and generating excitement.     One dish that holds a special place in my heart is Pain Perdu. It may seem simple, but the combination of flavours and memories it evokes make it truly unforgettable. The aroma of caramelization, the sweetness of natural honey, and the abundance of seasonal berries come together in perfect harmony. Paired with a good cup of black coffee, this dish has become my go-to breakfast. Its simplicity and the essence it carries never fail to set the tone for an amazing day ahead. It serves as a reminder that even the simplest of dishes can have a profound impact and infuse joy into our lives.

    8 inspiring things I learned as a third culture kid in Dubai

    “Our homes are not defined by geography or one particular location, but by memories, events, people and places that span the globe”, says author Marilyn Gardner.
    As an exciting land of opportunities for a plethora of adults, Dubai quickly became home to my parents who arrived 30 years ago with no plan of settling down or raising a family here.
    So immediately when people ask “Where are you from?” and immediately my brain starts to do the math. Wait, do I say where I’m born and raised? Or where my parents were born? But hold on, I grew up in Dubai my whole life, so this for me is home.

    All the early residents have seen the city grow since the early ‘00s, where the emirate as known by many ended at the old Hard Rock café in an area what is today known as Media City today. The comfort, safety and warmth to different cultures has left it as a cushion for many like my parents to settle down and make this inviting haven their home.
    While I often grew up with a sense of being unique in a negative sense, I’ve now realised how being different actually makes you stand out, thereby coming to the conclusion about how the pros outweigh the cons.
    What is the definition of a Third-culture kid?
    As per google, it’s a person who grows up in a culture different from the one in which his or her parents grew up in. The terms refers to the mixed identity that a child assumed, influenced both by their parents’ culture and the one they’re raised in.
    The term was first coined by American sociologist Ruth Useem, who focused on studding the lives of expatriates living in India.
    While a lot of us tend to focus on the negative aspects that come from moving abroad, we usually avoid shedding light on the myriad of positive elements and memories that we can cherish for a lifetime from this experience.
    Now as you go on to read and might be on the same journey as me and what I’ve learned and observed might come with a hint of nostalgia, you might relate to the below as your embark on your own path in this city.
    My friends became my family
    Having been raised in the same school for 12 years, my peers became my family and 16 years later, we to this date still speak on the phone almost every single day. Be it the first piece of advice I need, the first good news I wish to share or the first person to vent to after an unending series of unfortunate events, my friends are now family, and we don’t think twice before showing up and being there for each other on a daily basis.
    I’ve bonded with peers over my differences
    No one person in the emirate fits a mould. We’re all different and unique and come with our own set of experiences to the table. While it was challenging start to absorb facts from different backgrounds, before developing my own identity, I eventually realised that these differences are what gave me my own individual identity. With a sense of curiosity and inquisitiveness instilled in the other children I surrounded myself with while growing up, we quickly started learning from each other and found a comfort in the discomfort.
    I’ve also bonded over nostalgic memories…

    You can spot a Third Culture Kid in Dubai from a mile away. With a somewhat similar upbringing in the emirate, we instantly bond of similar elements of our childhood being, Oman chips, TGIF, street-side shawarmas or even long-standing locations such as the Clock Tower, we all instantly bond with each other, perhaps without even knowing each other’s name.
    I try to comprehend situations with an open-mind
    If there’s one element that stands out in the UAE, it’s respectful tolerance. To see how different cultures bond seamlessly, continues to amaze me on a daily basis. Be it our work environment or a pilates class, the exposure is not limited. With British, Australian, European and various other cultures, being under one roof, we aren’t tied to one culture and tend to appreciate different elements of different cultures from around the world. We don’t immediately rebuff an abstract concept, as we’ve been exposed to various upbringings over the years. Overall, being a third-culture kid is not always easy. You need to understand your cultures and lifestyles to be able to embrace how being different is a good thing. This however, makes you more approachable because you can understand others better.
    I always value my roots

    Every trip taken to the motherland, comes with a deep appreciation. To see my roots, brings a sense of newness with each visit. For me Dubai is home and I could never replace it with any other city, including my hometown. Although, it’s only when you’re taken away from what you have that you tend to appreciate what’s back home. Every trip that I take back to my roots, to spend quality time with my grandparents or cousins, I realise their value and appreciate what it feels like to be back to where my parents are from.
    Convenience is not taken for granted

    In which part of the world can you press a button and have your groceries delivered in 15 minutes at any given part of the day? From my favourite gourmet burgers to a green juice, the seamless system ensures, convenience through every aspect of living here. Be it a short-haul trip or a long vacation to different parts of the world, I quickly realise the privileges and quality of life of living in this emirate. With a myriad of services offered right to our doorstep, a sense of appreciation seeps in after every trip taken abroad.
    Every day is an adventure

    No one day is same here. As a community of learning and growing together, people come to this part of the world with a blank canvas to paint their own story. With new activities and discussions offered, there’s a lot left to the imagination as we’re constantly discovering what the city and its people have to offer. Being born and raised here only taught me more than I could imagine and I’m only excited to see what’s next in line as I continue to live here. As a melting pot of cultures this place has so much to offer and its city full of opportunity to both the working class and entrepreneurs.
    I have a soft spot for beaches
    The undeniable love for sand, picnics, azure waters and the beach is a big part of me. No matter where I am, there’s nothing like a calming walk by the beach or a few hours in the sun on a weekend. Because we are blessed with tropical views and eternal summer here, and I’m never going to let anyone take that away. While my love increases double fold during the Winters, I still enjoy a peaceful stroll during the warm season.
