And don’t get me started on that awkward phase when you just started seeing each other and aren’t sure if you’re at the buying-presents level or if you should keep it casual (for reference, I started dating my boyfriend around Valentine’s Day years ago. He got me a nice bracelet, and I got him a joke golf ball holder that looked like a pile of poop).It’s true: Valentine’s Day can kind of suck. But not this year! We’ve dealt with a hellish 10+ months and a crazy increase in stress, so we all deserve a little extra love on February 14. No matter what your relationship status says on Facebook, here are the best at-home plans to make your Valentine’s Day stress-free, enjoyable, and special.     Have breakfast in bed
    Sure, breakfast in bed is typically for mornings, but why not make it a nighttime thing? Breakfast for dinner is always fun (scrambled eggs, anyone?), and eating it in bed (with a mimosa or two) will feel like you’re at a luxurious hotel or on vacation. Trust me, you’ll be thrilled you don’t have to go out for date night when you’re relaxing in pajamas, eating pancakes, and bingeing Sex and the City for five hours straight (without anyone telling you to change the channel). 

    Do all your favorite traditions for yourself
    If you love typically love Valentine’s Day, carry on with all the same traditions. But this year, dedicate the traditions to the most worthy relationship: the one you have with yourself. Buy yourself your favorite flowers, indulge in a fancy box of chocolates, or treat yo’ self to that splurge item you’ve been wanting. Write yourself a love letter, cook your favorite meal, and light some candles for some romantic NSFW time (thank god you don’t need two people to orgasm, am I right?). While it may sound cheesy and feel silly, spending the money, time, and energy on yourself that you would normally spend on someone else will remind you that self-love is truly the best kind.

    DIY a wine and paint night
    Wine and painting classes are all the rage these days, so why not recreate them from the comfort of your own home? Order some cheap canvases and paint supplies online, look up a Youtube video for step-by-step painting, and pour a couple of glasses of wine for your friends. You’ll have a lot of fun, get your creativity on, and maybe even come away with new portraits to hang up in your homes (or you’ll laugh at how bad they turned out, but either way, it will be a great time). 

    Host a tasting
    Since you can’t take a girl’s trip to Napa Valley this year, bring Napa Valley to you. Host a simple wine tasting by sampling a few local wines (#supportlocalbusinesses), or get more detailed with cheese or chocolate pairings. Don’t forget an Insta-worthy cheese board, which is always a crowd-pleaser. And if you want to step up your game, create cards for the titles or origins of each wine, the different notes in each sample, and what foods they pair well with (so bougie). If beer or whiskey is more your friend group’s style, sample a few different types for a DIY flight. Pair with pretzels and beer cheese or takeout from your favorite brewery. This is your important reminder that a box of chocolates pairs well with just about any alcohol. 

    Bring the sports bar to you
    If your group of friends is more the “screw Valentine’s Day” type, it doesn’t mean you shouldn’t have fun on February 14. Forget the fancy foods and elegant wine; opt for something a little more casual and enjoyable by turning your home into your favorite local sports bar (every friend group has one). Turn on a pre-recorded game, ESPN Sports Center, or any past-season highlights to set the scene. Grab some beers and make (or order) all of your favorite bar appetizers like wings, pizza, or onion rings. If the night breaks out into a game of good old-fashioned beer pong, we’d call you genius. Loungewear attire required. 

    Have a party for one
    Because you don’t need to have company over to have a dinner party, plan a special night in for just you. Hang up string lights, make some mini appetizers, pop the nice champagne, turn on jazz music, and dress up in your favorite dinner-party attire. Why should you dress up your home (and your OOTD) just for other people? After all, celebrating yourself is the best possible occasion to bring out the nice silverware. Oh, and if your idea of a “party” looks more like beer kegs and loud music, why not throw one at home for yourself? A beer keg might be excessive (no judgment, either way), but pour yourself a cold beer, turn on the playlist that makes you want to dance, and snack on your favorite party food.     Movie marathon
    For a special night at home, don’t settle for the same Netflix show you watch every night (Bridgerton can wait until tomorrow). Switch it up by planning a special movie marathon. Watch as many movies as you can get through of your favorite franchise like Harry Potter or Star Wars, or pick a genre you love (’80s teen movies or historical dramas are both classic choices). Get all your favorite movie snacks, put your phone away, and snuggle up in your coziest sweats for a movie marathon. The best part about being solo with no one else to disturb you is that you can fantasize about Mr. Darcy, John Cusack, or Gal Gadot all night long (whatever tickles your fancy). 
     
    Create a self-love night
    Not to sound like a broken record, but the most worthy kind of love is self-love, whether it’s Valentine’s Day or not. Spend February 14 getting to know yourself, wooing yourself, caring for yourself, and prioritizing yourself. Plan out a schedule in advance of all the things you want to do to practice self-love. For example, revisit a childhood hobby, make a playlist of all your favorite songs, create a vision board, make a list of what you love most about yourself, cook an indulgent meal you love, and watch your favorite movie.     I’m a pretty positive person overall, and I almost rarely write off someone for one thing. Heck, my best friend hates the one thing I love in this world (the Jonas Brothers), and I still allow her in my presence. But there’s one type of person that I just know I won’t jive with.     The #1 Conversation You Need to Have Before Getting Married

    It started as a normal morning enjoying a cup of coffee together before the craziness of the day began. “Coffee time,” as we call it, is our daily ritual of couple time where no phones are allowed, and we just talk. Most days it’s an enjoyable conversation, but on this particular morning, we veered into dangerous territory: money. Before I could try to change the subject, an inevitable question surfaced.“Exactly how much debt do you have?” he asked as my body began to tense.
    For the record, I don’t have a lot of debt, but I do have some. My partner, on the other hand, has none. I immediately felt uneasy and insecure. We made it through the conversation unscathed, but it got me thinking about couples and finances and why it’s so hard to talk about money. Studies show that money is one of the most widespread, difficult, and persistent issues within marriages. It’s no wonder a new practice of premarital financial counseling seems to be gaining popularity among engaged couples. 

    Why is it so hard for couples to talk about money? 
    When two people decide to do life together, it’s much more than a merging of households and families. As a licensed couple and family therapist Michelle Collins explained, couples are also joining their pasts and future dreams. “Along with those things, they are joining their different orientations towards money,” Collins said.
    Our family culture, values, and past experiences help determine our views and beliefs about money. “One’s relationship with money develops the language they use when communicating about, interacting with, and showing others how they treat money,” Collins said. “It is common for partners to have different languages about money and when trying to bridge the gap, couples find they don’t have all the tools to translate—and listen—clearly.”
    It comes down to a communication issue. Collins works with couples to examine their family tree and discuss how each individual’s parents’ life experiences and views toward money have impacted their own relationship with money. “This conversation allows partners to better understand how the other person has developed their money language and then find ways to translate so they can be successful managing their finances.”

    What is premarital financial counseling?
    Think of it like couples counseling meets financial counseling. An unbiased, trained professional will help translate your different money languages so you can navigate important financial decisions. “Premarital financial counseling involves the creation of a budget, and the discussion of long-term and short-term financial goals like saving for a home, or the parties’ thoughts about retirement,” Holly Davis, a family law attorney at Kirker Davis LLP, explained. 
    You will discuss everything from spending habits and work ethic to how you’ll handle potential difficult financial situations. “These are so important to discuss because if you are engaged to a big spender, and you are a penny pincher, you have the opportunity to work with your fiancée to see if you can influence their behavior, or to see if you can soften your stance on the position,” Davis said. “Compromises need to be reached when two parties have two very different opinions on big financial topics.” You will learn a lot about your partner and your relationship when you get into the details of what you will do if someone loses their job, or how much money they think should be spent on vacations, entertainment, or clothing.

    Who can benefit from premarital financial counseling?
    Don’t let the word premarital fool you. Both Collins and Davis believe every couple can benefit from financial counseling. “I have never seen a couple not benefit from having a dedicated and structured conversation around money,” said Collins. 
    Davis pointed out that financial consultation is important any time a couple shares expenses or a living space regardless of the status of the relationship. “Waiting for an engagement to discuss these issues is oftentimes too late to change course if you are truly incompatible with someone financially,” she said. Even if you think you have similar views towards money because you come from similar families, Davis warned that could be a false sense of security. She said you must get into specific hypotheticals with your partner to know you’re really on the same page.

    How to avoid money issues in your relationship.
    First things first, stop avoiding talking about money. Davis recommended being proactive about discussing money frequently, rather than waiting until you’re in the middle of a financial issue. This, she explained, will help you become more self-aware and realize what triggers you when discussing money. “If you know your own roadmap to having a negative reaction, you can try to stop it before it starts,” Davis said.
    Don’t shy away from uncomfortable conversations. According to Collins and Davis, the following questions are important yet often avoided prior to marriage:

    Will we have a joint account? 
    Are there expectations for us to monitor or hold each other accountable about personal spending? 
    Do your family members have any financial expectations of you?
    Do you like to enjoy money, have it for security, or use it as a status symbol?
    If you were fired or laid off or couldn’t perform your current job, what would you do?  What’s your Plan B?  
    If you plan on having children, how does each person feel about what their role is in raising the children? Will one person primarily perform this function, or will it be a shared role between the two parties?

    Ultimately, it comes down to willingness to communicate and compromise. The earlier you identify and understand your different money languages, the quicker you can work on finding common ground. “The hardest part isn’t identifying differences, it’s actually changing your own default opinion in the face of a different opinion that is the hard work,” Davis explained. “If you are engaged to a person who is willing to do this, then your differences can likely be successfully bridged.” 
    And if these conversations are too difficult on your own, know that you can always bring in a professional. A trained couple’s counselor or premarital financial counselor will help navigate the conversation and close the gap between your different money languages without bias or emotion. They will ensure the conversation is productive and that you walk away with a clear understanding of your financial future before you walk down the aisle.
    As for my coffee time debt discussion with my partner, I’m sure it is the first of many uncomfortable conversations about money. And maybe therein lies the real value in it. After all, life isn’t always comfortable so for a relationship to last, it needs to be built on a foundation of honest, respectful communication, no matter what the topic.  More

    8 Indoor Hobbies to Get You Through the Winter

    The likelihood of me leaving the house for anything other than essentials (like work and obtaining groceries) decreases exponentially with the temperature outside. Below freezing? Yeah, probably staying indoors. 10 degrees with a wind chill? Screw the groceries, see you next April.For the days (or, let’s face it, months) when the weather is less-than-ideal, it’s easy for our productivity—and general satisfaction with life—to come to a screeching halt as we hole up with blankets, junk food, and a long, long Netflix queue.
    Don’t get me wrong: I love a good Netflix queue. But it’s difficult enough for busy people to maintain affirming, fulfilling hobbies as it is. Add a snowstorm into the mix, and suddenly an entire season is reduced to a placeholder (especially after the holidays end) for all the stuff we’ll probably start up again once the world thaws.

    1. Experiment in the kitchen

    When it comes to cooking, there are two kinds of people: Those who cook to live and those who live to cook. Try venturing into the second category by trying new dishes, recipes, and methods. Experiment with new cuisines or flavor profiles and get creative.

    If cooking anything beyond the basics feels totally out of your wheelhouse, try investing in a good cookbook first. As new recipes and new flavor combinations work for you, you’ll need to use cookbooks less and less to whip up something great.

    2. Stay balanced with yoga

    Even if you’re more of a HIIT or treadmill kind of girl, think of yoga as an exercise for stress relief, rather than just physical. Certain yoga poses can help anxiety or lessen the effects of sitting at a desk all day. Try adding a yoga practice into your daily routine to deepen your breath, stay connected to your body, and make it to summer with as little stress as possible.

    If setting time aside for yoga seems difficult to fit into your schedule, incorporate some flows and poses into your daily routine. For example, try an energizing flow first thing in the morning to wake you up, a wind-down flow before bed, or sit in Child’s Pose whenever you start feeling stressed. 

    3. Learn a new language

    Why not spend all winter learning a new language, then try out your newfound skills on your spring or summer vacation? This hobby will keep your mind stimulated and, if you keep it up, give your resume a major boost.

    4. Sharpen your writing skills.

    While natural ability will always play a part in most talents, writing is first and foremost a learned skill. If you’ve ever wished you were a better writer, you’re in luck, because you totally can be. You just need practice.

    Where to start

    If you feel like you have a lot of learning to do, check out writing courses on Skillshare. If your goal is to get creative juices flowing, then write for the sake of writing. Make a plan for how often you want to write, then find a list of writing prompts you like (here’s one) and get started! You can complete the prompt with as little or as much written word as you want.     5. Unwind with knitting

This hobby actually makes a night in with Netflix productive, because you’ll end up with sweaters and scarves and hats at the end. Win-win in our book.

    You’ll need a pair of knitting needles, yarn, a crochet hook for picking up dropped stitches, and a yarn needle for joining pieces of knitting together. Then, you’ll want to pick a pattern to start. If you’re a total beginner, take a look at these classes to help you get started.

    6. Reconnect with your inner kid.

    Remember when you were young and a night playing board games or doing puzzles was considered a night well spent? We sure do. As adults, why can’t spending time with friends and family (with some good old-fashioned entertainment) be a hobby? You’ll bond with loved ones, stimulate the brain, and pass the time with some lighthearted (or ultra-competitive, if you’re into that) fun.

    Where to start

    First, pick your board games (duh). Then, on a night you’d otherwise spend curled up watching TV, opt to play the games with your significant other, roommates, or friends. If you’re feeling extra fancy, make board game nights (complete with wine and cheese) a weekly gathering among your group of friends. If puzzles are more your jam, here’s a list of the best selling puzzles on Amazon. If you don’t have kids or pets that will make a mess of it, leave your puzzle out on the coffee table to revisit throughout the day.

    7. Start a new workout plan

    I know, I know. You just rolled your eyes at the suggestion that a workout plan could actually be considered a “hobby.” But workouts don’t have to be forced, painful, or boring. In fact, your workout plan in 2021 should look like finding a workout that feels like a hobby, whether it’s a relaxing yoga flow after a long day or an energizing dance class that reminds you of a GNO (remember clubs?).

    It’s Hard to Watch the Growing Interest in Asian Food After Being Shamed for My Culture as a Kid

    Everyone has a handful of memories that are painful to remember. I have a fistful of memories that are shrouded in guilt and shame. These memories lie deep within my belly, and among these darker memories, there are several of them that are connected to being Asian American. In between the shrouds, I remember being ridiculed for my eyes and being told to “go back to where I came from.” To be frank, growing up Asian American was difficult for me. I grew up in the early 2000s; in a past world where I often felt marginalized by my classmates. While not all Asian-Americans or BIPOC share my experience, based on my candid conversations with my peers, there seems to be a feeling some of us share; this is a feeling of shame. Whether it’s shame over our bodily features or over our heritage, this feeling, I’ve felt many times, lies within the recesses of our bellies. My shame is often surrounding my Korean heritage and the “pungent” foods we eat.
    In the early 2000s, Asian food was not as popular as it is today. Anglo-cized Asian staples, such as Orange Chicken and California Rolls, were around and accepted, but Asians and their authentic food were not. I’m talking about Asian Barbeque, Hot Pot, Xiao Long Bao, Dduk Gook. I was taught by my family that if I ate Korean food in public, that people would shun me. The shame I felt started at a young age. 
    I remember the night I learned that my Korean food was not accepted. It was a cool September “school night.” I was in first grade and would be experiencing my first lunch period since graduating from kindergarten.

    My family had just finished a giant pot of Kimchi Jigaae (a spicy, tangy stew made out of sour fermented kimchi and beef). After scarfing down my bowl, I declared: “I’m bringing this to lunch tomorrow.”
    In response, my mom quickly stated that, in fact, I would not be bringing this to lunch tomorrow… or ever. Her reasoning was that my mostly white, non-immigrant classmates would make fun of me for a number of reasons. She broke it down for me pretty quickly:

    “It smells too strong”
    “It has a weird taste compared to a typical peanut butter sandwich”
    “Your schoolmates simply can’t handle it”

    In Korean culture and in many cultures, food is celebrated, and family time can mean cooking and eating together. In Korean culture, food is our culture. After all, making kimchi with your whole family in the fall is a ritual called Kimjang. 
    I had known that food was a big deal to my family for as long as I remembered, but after hearing my mother explain that our food wouldn’t be accepted, I understood something else. At the tender age of 5, I learned that society didn’t accept who I was because of my heritage and race. After all, if my food and my culture weren’t accepted, how could I be accepted? 
    As years passed, I would remain quiet as my non-POC peers laughed at the thought of Korean people making “BBQ” and would turn their noses up to homemade mahndoo (otherwise known as Korean dumplings). I would even occasionally be the butt of the joke as people asked whether I ate dogs or not.

    It took until my senior year of high school for something strange to happen. One of my friends said she tried Korean food for the first time and loved it. Since then, my friends have asked me to go to Korean BBQ with them, or have asked how to use chopsticks properly. 
    Over the years it has been hard watching my friends embrace Asian culture with open arms. There lies an underlying frustration that stems from the pain of having to hide my identity for so long. More importantly, my frustration also lies in the way Asian Americans have been treated in the United States over the last 150 years.

    In the past, the rise in awareness of Asian cuisine has come from historic immigration waves. President Lyndon Johnson’s Immigration and Naturalization Act of 1965 allowed for more Asians to finally migrate to the United States, including the immigration of my family. The migrants then exposed non-Asian Americans to new cuisines. 
    The Immigration and Naturalization Act of 1965 is something that has always made me cringe. While it’s lauded for ending a quota-based immigration system, I always felt that it’s a remembrance of wrongdoing towards the Asian community. After all it was the Chinese Exclusion Act of 1882 that did not allow Chinese immigrants to the U.S. (Later, in 1924, other East, Southeast, and Southern Asians were barred from immigrating also). The Exclusion Act, the first federal law to restrict immigration by nationality, later turned into a restriction by race. It took until 1943 for the Exclusion Act to be repealed, and during the 19th century, there was even a persisting stereotype that the Chinese ate rats. 
    Fast forward to present day, when the Pew Research Center noted in 2017 that there are 20 million Asian-Americans in the U.S., and Asian fast-food restaurant sales in the United States have increased by 135 percent since 1999.

    This growth in Asian food over the last several years has been astounding to see. But after years of Asians being ridiculed, how can I not feel frustration towards this growing interest in Asian food? Why show interest now? What’s the point? 
    After being shunned for my Asian food and heritage my entire life, now the current exoticism and wonder towards Asian cuisine is something that makes me wince. When my friends mention that they want to try more authentic Asian food, I can’t help but feel like they are rubbing salt in an old wound. Where was this acceptance and love for this food when I was a kid.
    Given my uneasiness, I asked my Asian peers what they thought about the current rise in popularity of Asian food. Kevin Chen, a Tawainese-American, said, “People are being more aware of cultures now. It’s just hard because it’s not something that’s going to happen overnight. It’s more about bringing up the message [about Asian food] and having people be more aware of these cultures and the depth of them.”
    Chen continued, “It’s not easy. I had a coworker that said a certain type of Asian Cuisine, Sichuwan, is superior to all Asian food, and you can’t just write off a whole culture like that. You can’t just pigeonhole cultures. Each culture’s cuisine is different.”
    Chen’s cautious optimism towards the growing interest in Asian food is one that mirrors my own. It’s hard to envision a place where people are becoming more accepting towards the Asian community. Their curiosity is often one that I look at with weariness. This weariness comes from a fear of snide comments and a wall of shame. All it really boils down to is a wish to be respected for your culture and identity.

    Harinder Kaur, an Indian American, had different thoughts as she reflected on her childhood. Kaur said, “Growing up, I wanted to be more white and accepted. When we came to America, we didn’t even have ‘American’ clothes. I saw more racism through the way I looked, not over food. I think I’ve gotten more comfortable accepting my culture, but there’s more to it than food and racism.” 
    Kaur’s story is one that holds true for many Asian families today including my own. The attempt to assimilate to white culture shows the amount of shame we harbor towards our own Asian cultures. 
    While Kaur and Chen may not be reflective of the whole Asian American community, they share a sentiment that needs to be heard louder during these trying times. This sentiment is that Asian stories need to be heard more and accepted more into society, but more importantly, we as Asians need to be prouder of who we are. I truly believe this is the only way forward. After years of hiding and feeling shame within our bellies I believe it’s time we finally stand proud together.
    Perhaps this can be a new step towards more equality and understanding. Instead of focusing solely on our past, it’s time to discuss and reflect on what our future as a nation can be, Asian or otherwise. More

    10 Insanely Easy Vegetarian Meals I Rely on During the Week

    One of my goals for 2021 was to make myself more well-balanced and nutritious meals at home. I want to add more fruits and veggies to my everyday diet, rely less on processed and packaged foods, and make simple swaps for healthier versions of some of my favorites (such as pasta and tortillas).Although I already enjoyed cooking for myself, I knew that I just did not do it enough. I also have been a vegetarian for over 10 years, so I wanted to challenge myself to try some new recipes. I am very proud to report that all 10 meals I’m about to talk about were made within a week—so far, so good on that goal!
    I also want to take this time to thank the four most important things in my life right now, especially when it comes to achieving this goal: my air fryer, Trader Joe’s carb-savvy tortillas, my new Always Pan, and chickpeas. 
    Whether you are a vegetarian yourself or just need some inspo for the new year, check out these 10 incredibly easy (and delicious, if I do say so myself) vegetarian meals that I rely on during the week:

    1. Buffalo Chickpea Salad Wraps

    This is a new favorite of mine! Chickpeas are a super easy way for vegetarians to include protein in their diet, and they are also incredibly versatile—making them a non-meat-eater’s best friend.
    To make these salad wraps, mash up clean and dried chickpeas in a bowl and mix in plant-based mayo, buffalo or hot sauce, salt, pepper, and garlic powder. Spread on the tortilla of your choice (I love the carb-savvy ones from Trader Joe’s), and top with lettuce, avocado, onion, and feta cheese for the perfect WFH lunch.

    2. Burrito Bowl

    Looking at this photo makes my mouth water. Start by cooking onion, frozen corn, and peppers in a skillet with your favorite seasonings. When that’s finished, add the mixture to a base of brown rice and black beans (if you’re like me you’ll just get the microwave options), then add the toppings of your choice. I usually go with avocado, plain greek yogurt (as a sour cream substitute), chihuahua cheese, and a couple crushed tortilla chips. 

    3. Oatmeal with Peanut Butter and Banana

    This is a simple one! I make plain microwave old-fashioned oats with unsweetened vanilla almond milk, and then mix in agave syrup and cinnamon once they are cooked. I top it off with natural peanut butter and a banana for extra protein and deliciousness. 

    4. Cauliflower Gnocchi with Pesto, Goat Cheese, and Balsamic

    A true classic and a lazy girl’s best friend: Trader Joe’s cauliflower gnocchi. I make mine in my air fryer (if you’re not doing this yet, it will change your life) with a dash of olive oil, garlic powder, and Italian seasoning, and then simply mix it up with pesto, balsamic glaze, and goat cheese crumbles. YUM. 

    5. Tofu Lettuce Wraps

    My mom and I have been making this recipe for years, and it just continues to evolve. I’m very excited to share that I recently cracked the code on how to get your tofu as crispy as possible, and the answer is two simple words: air. fryer. Seriously, this tiny little appliance made my life 1000x better, and if you don’t have one yet, WYD?!
    To make these lettuce wraps, air fry your drained and cubed tofu with your teriyaki sauce of choice and prepare some plain brown rice. You could also make some veggies to add if you’d like. Then add everything to a butter lettuce cup, and top with a bit of sriracha mayo and crispy chow mein noodles—or don’t, if you’re feeling extra healthy. 

    6. Spicy Potato Tacos

    As if 2020 wasn’t bad enough, it was also the year that Taco Bell decided to take potatoes off the menu and break my little vegetarian heart. So if you’re in the same boat as me and still mourning that loss, this is a special treat for you: at-home spicy potato tacos.
    I make these by air frying (yes, I’m using it again) cubed baby potatoes seasoned with salt, pepper, olive oil, garlic powder, chili powder, and red pepper flakes. The potatoes by themselves are delicious, but I like to put them on a low-carb tortilla and add a sprinkle of cheese, avocado, plain greek yogurt, and hot sauce to pretend I am at Taco Bell. I also like to tell myself these are a healthier version—so, you know, if they’re not, please don’t tell me that. 

    7. Lunch Snack Plate

    This is what I like to call lazy lunch. Basically, it consists of anything in my fridge that needs to be eaten. For example: on the day I took this photo, I had some leftover buffalo chickpea salad mixture on a lettuce wrap as well as a side of veggies and crackers with plant-based cauliflower tzatziki dip. 

    8. Breakfast Tacos

    I would seriously eat these tacos every day if I could. They are super simple: scrambled eggs, veggie sausage (I prefer MorningStar), goat cheese crumbles, cherry tomatoes, avocado, and hot sauce on low-carb tortillas. 

    9. Mediterranean Chickpea Salad

    Ah, chickpeas, we meet again. This very easy mediterranean salad is just a mixture of washed and drained chickpeas, avocado, red onion, cherry tomatoes, and feta cheese. For dressing, I drizzle the mixture with olive oil and red wine vinegar and season with salt, pepper, and garlic powder. You could also add cucumber and kalamata olives—I was just out on this day!

    10. Veggie Fried Brown Rice with Tofu

    I’m a huge fan of using leftovers, and this dish is perfect for that. I had some leftover tofu and brown rice from my lettuce wraps, so I fried up some veggies—in this case, peppers, carrots, corn, and red onion—then added the rice, tofu, a fried egg, and some more teriyaki sauce all in the same pan.  More
