    Inside Dinner by Heston Dubai with Head Chef Chris Malone

    Chris Malone honours heritage and elevates the everyday at Dinner by Heston Blumenthal Dubai.
    Tell us about your journey into the culinary world – when did you know you wanted to be a chef?
    I was young, around five or six years old, when I first realised, I wanted to be a chef. We would visit my grandparents most Sundays, and the table would always have a spread of wholesome food, with everyone gathered around it, connecting and smiling. There was an immediate connection between me and food from that point. I was so interested; it sparked a creative environment for whoever was cooking, and I became intrigued, especially by the creative side. I convinced myself that all I wanted to be was a chef, and it stuck with me. I was certain that as soon as I graduated high school, I would find a way into a kitchen and become a chef. As soon as I graduated, I began my career at 15 with a four-year apprenticeship at Fraser’s in Kings Park, Perth. By the time I reached the age of 21, I was already being recognised by the industry, which was an amazing moment. In 2017, I was named Australian Chef of the Year. After spending time in some of the most incredible restaurants in Western Australia, chef Daniel Humm invited me to join him and the team at the three-Michelin-starred Eleven Madison Park in New York. From there, I continued to push my own limits and journeyed to London to join Daniel’s next venture, the Michelin-starred Davies and Brook at Claridge’s, after which I secured an opportunity at a new luxury hotel chain, NoMad. After I worked on the launch of NoMad, I took the leap to come to Dubai, where I have been at the helm of Ossiano, supported the pre-opening and opening of Dinner by Heston Blumenthal, as well as FZN by Björn Frantzén.
    What drew you to say yes to Dinner by Heston’s Dubai chapter?
    Heston Blumenthal has always been an influential and inspirational figure throughout my culinary journey-starting from the early days when I began working as a chef in 2010, if not earlier. At the time, Heston was on MasterChef Australia, The Fat Duck was in its absolute prime, and his molecular gastronomy was everywhere. His impact and what he was doing played a big role in my journey as a young chef. So when the opportunity came up for Dinner by Heston Blumenthal in Dubai, I thought-absolutely. To join Heston would be an incredible opportunity.
    How do you lead in a high-pressure, Michelin-starred kitchen?
    Stay calm, lead by example, teach and inspire. In some Michelin-starred kitchens, there’s incredibly high pressure to maintain the standard and attention to detail – but I don’t believe that’s the only way to lead. Having learned this first-hand, I’ve always found that you get the most out of your team, and achieve more, by respecting, empowering, and nurturing them – always leading with graciousness. I aim to foster a truly empowering kitchen environment; I’m incredibly passionate about the next generation of chefs and want to see them rise, grow, develop, and succeed. To sum it up, my leadership ethos is: gentle pressure.

    What defines your style on the plate – is there a signature you’re known for?
    In three words, when it comes to flavour: fresh, vibrant, and acidic. I also believe that you should let beautiful ingredients speak for themselves and allow the product to shine on the plate. To make this happen, it’s important to invest in using the best seasonal ingredients. At Dinner by Heston Blumenthal, we source and select the finest products we can – and do as little to them as possible – to truly let the ingredients shine.
    What’s been the biggest surprise about Dubai’s dining scene?
    Over the past four years, it has been incredible to witness how the dining scene has grown – both dynamically and organically. There’s been a noticeable shift, with a rise in homegrown concepts that are championing creativity. This, combined with the arrival of global names, has attracted talented chefs from all over the world who want to be part of the movement. What these chefs are creating and putting on plates is simply incredible.
    What’s the most theatrical dish you’ve ever worked on?
    The one-bite Aerated Beetroot, which disappears in a split second, is a creation from The Fat Duck menu – and it takes three days to make. To begin, we take baby beetroot, juice it (as the sugar content is higher and the flavour less earthy), and then reduce it. We use a kitchen-use rotovap – a high-tech piece of equipment that looks like it belongs in a laboratory. It’s essentially a water bath set to 30 degrees. There’s a glass sphere into which we pour the beetroot juice; the device pressurises and spins the liquid, allowing us to lower its boiling point. We then whip the juice into a meringue, which is piped and dehydrated. The final result resembles a small aero ball – crispy and delicate – filled with horseradish cream and served in a single bite.

    What’s the one rule you always follow in the kitchen – no matter where you are in the world?
    Taste everything. This is absolutely crucial – especially when you’re stepping up in a Michelin kitchen and working within larger brigades. You need to ensure consistency in every aspect; for example, when an ingredient is being reduced, you need to taste it to ensure the salt level hasn’t intensified. At Dinner, we’re constantly tasting. Before every service, the whole team is involved in a full tasting of everything on the menu.
    What keeps you inspired beyond the kitchen?
    Running and travelling are things I turn to in order to stay inspired – exploring different cities and cultures, and trying new food. I try to travel as much as I can to experience the world beyond the kitchen. I also run quite a lot; it’s the perfect way to stay fit and healthy, while providing mental clarity amidst the stresses of day-to-day life.
    What’s next for you – are there any new dishes or ideas you’re excited to bring to Dinner by Heston?
    We are currently celebrating 30 Years of the Fat Duck, and to pay homage to the restaurant we are featuring a different creation from The Fat Duck each month as part of our tasting menu until August. Culinary highlights include the Turbot Veronique (c. 2005) which is on the menu until 19th May, it pairs Muscat grapes, mussels and parsley. Another standout worth mentioning is The Alfonso Mango (c. 2001), a distinctive dish that combines pine nuts and mango stems, this showcases Heston’s exploration of molecular gastronomy, this dish will be available exclusively in May. In July we will be unveiling the Scallop, White Chocolate, and Caviar (c. 2024) which is a bold and uncommon flavour pairing, guests should be excited about this one. Looking at the bigger picture, I’m looking to refine the entire guest experience, beyond the kitchen, from efficiency to the food development. I am working extremely closely with James ‘Jocky’ Petrie, Group Culinary Director of The Fat Duck Group to provide insight on how we can make Dinner by Heston Dubai a different experience to the one in London, by using our creativity with produce whilst aligning with the DNA of dinner.

    How Meta is empowering a new wave of MENA content creators

    Joana Jamil, Strategic Partner Manager of Global Partnerships at Meta, shares the newest content creators in the region and what they look for in the next big thing.
    Who are some of the most exciting emerging content creators in the region right now?
    I’m really inspired by the wave of creativity we’re seeing from emerging content creators in the region right now. There are lots of incredible emerging regional talents such as Raghad Zamell, Osama Chabbi, Taliaa Fawaz, and Jana Al Hafar, just to name a few. What’s so exciting is how diverse and innovative this new generation is – there’s a vibrant mix of storytellers, artists, and voices who are using our Meta platforms to share authentic perspectives and connect with audiences in fresh ways. From Reels that capture cultural moments to Threads diving deep into local issues, they’re not just creating content but building communities and sparking meaningful conversations. It’s less about names for me and more about the collective energy and passion driving this movement forward – it’s a dynamic time for creativity in our region.

    How is Meta supporting Arabic-first or culturally rooted content?
    Over the course of the last three years we have collaborated with dozens of Arabic-speaking creators from the region – both emerging voices and well-established talent – including the likes of Amina Hussein, Amro Maskoun, Yara Bou Monsef, Omar Farooq, Dolly Dib, Mina AlSheikhly, Eisa Al Habib, and many others. What we’ve seen time and again is that when creators are empowered to express themselves in ways that are authentic to this region’s culture and audience, the content resonates more deeply. We recently launched Meta AI in Arabic, a major step toward more inclusive and personalised digital experiences empowering our region’s Arabic-first creators with a tool that feels natural and relevant to their daily lives.
    What sets the new generation of MENA creators apart from global counterparts?
    What sets MENA’s new creators apart is their authentic celebration of our rich culture, history, traditions, and diversity, which resonates globally and allows them to seamlessly weave these elements into their content. For instance, just last month, the spirit of Ramadan’s unity was beautifully woven into creators’ content, as seen in the work of Chef Leyla, YusurAlKhaildi, and Cybele Haddad, among others who specialise in diverse content areas such as food, fitness, lifestyle, and fashion. Moreover, domestic tourism is experiencing an unprecedented surge across MENA countries, enabling travel and lifestyle creators like Dolly Dib to uncover hidden gems in their own countries and neighbouring ones. By leveraging Meta platforms, including Meta AI for creative storytelling, these creators skillfully blend Arabic heritage with a universal vibe, rendering their content both distinctly regional and globally relatable.
    What advice would you give to aspiring creators trying to stand out to the Meta team?
    Aspiring creators should show up with intent. Have a clear vision for the stories you want to tell. Be consistent, posting regularly to build your presence across Reels or Threads. Educate yourself about Meta’s tools – explore features like Meta AI to boost your creativity. Above all, find your unique voice, stay authentic, and bring original ideas. That dedication and know-how will make you shine.

    How important is authenticity versus aesthetics in today’s creator economy?
    Authenticity and aesthetics both play meaningful roles – and finding the right balance really depends on the audience, the creator’s niche, and what they’re trying to achieve. For some communities, especially in areas like design, photography, fashion or film, aesthetics aren’t just about how content looks – it’s part of the creator’s craft, talent and self-expression. In those cases, a well-curated feed can be a powerful storytelling tool. At the same time, we’re seeing a clear shift on Instagram toward more authenticity. People are increasingly drawn to content that feels real and relatable rather than overly polished. This is reflected in the rise of trends like “photo dumps” and “Add Yours,” as well as features like Stories, Close Friends, and Remix, which make it easier for users to share everyday moments and connect on a more personal level. Ultimately, the beauty of today’s creator economy is that there’s room for both. Whether you’re a visual artist with a carefully curated aesthetic or someone sharing spontaneous, behind-the-scenes candid moments, Instagram is a platform where all types of creativity can thrive.
    How is Meta helping shape the future of content creation in the region?
    At Meta, we’re seeing incredible momentum in the creator economy across the Middle East, and we’re committed to supporting that growth. Content creation today is being shaped by a multitude of new tools, interactive formats, and ways to connect with the audience – and we are right at the center of that transformation. One of the biggest shifts is the rise of AI tools in the creative process which not only helps to massively accelerate the production and take care of the time consuming tasks but also takes creativity to the next level.     Are there initiatives, grants, or programmes Meta offers to help boost emerging voices?
    We always say that creators are central to our platforms – their creativity powers connection over content. We are regularly collaborating with both emerging and well-established creators to help them amplify their voices, grow their influence and spark new ideas within the Instagram community. For instance, we annually spotlight a number of resonant creators who are making a significant impact on Instagram through our global Creators of Tomorrow programme. We also support creators with programmes such as Creators for Purpose, which we’ve announced recently in partnerships with CreatorsHQ in Dubai with the goal to support and elevate 5 creators with their philanthropic missions. We also partner with global and regional brands to give regional creators exposure and opportunities tocollaborate on a global scale. We understand that creators are entrepreneurs and want to turn their passions into a steady income, so building tools to help them make money on our platforms is a key priority for us. Advertisers are drawn to creators for their ability to authentically tell stories and engage audiences and we ensure that both creators and businesses know how to take full advantage of brand opportunities on our platforms.     This is The Discovery Issue – what has been the most surprising discovery in your career?
    My biggest discovery is how a win-win mindset transforms everything. I thought career success meant outworking everyone. But I’ve found that serving others – giving my all, never halfway – ignites real magic. When I pour my heart into empowering creators, I win too. It’s not just work; it’s my fire. That ‘serve first’ spark has opened doors and changed me forever.

    How I got my job as… founder of a Dubai-born Scandinavian home decor destination

    This week, we speak to Christiane Nasr, founder of The Bowery Company.
    Welcome to the Emirates Woman weekly series ‘How I got my job as…’ where we speak to some incredible entrepreneurs and businesswomen both based in the UAE and globally to find out about their career paths that led them to where they are now; what their daily routines look like; the advice they’d give to those starting out; and the hurdles they’ve had to overcome.

With her chic curatorial eye and commitment to sustainability, Christiane has successfully filled beautiful homes and spaces with modern decor and scaled the business, including a recent opening of the Riyadh showroom.
    Here, Christiane shares her journey having embarked on a career change, her lessons learned as an entrepreneur, and her future goals.
    What was your favourite subject at school?
    Literature. I’ve always been drawn to stories, the emotion, the nuance, the perspectives. That ability to connect with ideas beyond your own reality has served me in every chapter of my life, whether I was structuring investment portfolios or curating design collections. I ended up studying at economics, mathematics and a minor in Russian Literature!
    What was your first job?
    I began my career in finance in Geneva as an investment advisor for UHNWI in the GCC and Europe and worked my way up to be an Investment Director for a leading European bank heading their investment office in Dubai, spending over 13 years in Geneva and the UAE. It was a high-pressure and high-stakes job, but it gave me discipline, resilience and the confidence to lead, take calculated risks, and trust my vision.
    What eventually brought you to Dubai?
    The bank I was working for in Geneva sent me to Dubai to head regional investments. From the moment I arrived, I was struck by the city’s energy and ambition it was in 2012. Dubai welcomes big dreams and fuels entrepreneurship, and that mindset is contagious. It sparked something in me and planted the seed for what would eventually become my next chapter.
    What inspired you to enter the interior and retail space and launch The Bowery Company?
    In 2014, I was in New York, walking down The Bowery Avenue, when I noticed a wave of industrial lighting and design shops, bold, raw and inspiring. That moment sparked something. Back in Dubai, I couldn’t find furniture that was both design-driven and accessible. So I started The Bowery Company with a mission to “Bring Design Home.” At first it was a side project, but in early 2018, I left banking entirely to pursue it full-time. It was the scariest and most liberating decision I have ever made.

    What are the key elements of your role?
    At its core, my role is rooted in vision and strategy, shaping the long-term trajectory of The Bowery Company while remaining deeply anchored in purpose. I am not just bringing design home, I am building a movement centered on timeless aesthetics, sustainability, and cultural relevance. It means making bold, forward-thinking decisions, whether it is entering new markets, as we did in Saudi Arabia, or redefining what affordable luxury looks like in the region. Above all, I lead a passionate, talented team, and my responsibility is to inspire, challenge, and foster a culture where creativity, innovation, and accountability thrive.

    Talk us through your daily routine.
    I wake up at 6am, spend quality time with my kids, then head to Barry’s Bootcamp to set the tone for the day-I train there seven days a week. After that, it’s coffee and straight into work mode. My days are a dynamic mix of strategic meetings, project development, curating new collections, and staying closely connected to our community of clients and collaborators. I work hand-in-hand with our Saudi team as we pursue major hotel, F&B, and commercial projects, while also reviewing marketing campaigns and planning our next launches. I usually head home around 7pm for dinner, homework, and bedtime routines with my kids 5 and 7 year olds then, I’m often back at my laptop for a few more hours to wrap up the day.
    I’m a hardcore entrepreneur; my workdays can stretch 12 to 16 hours. But I also believe deeply in work-life harmony. Some weeks allow space to recharge, while others demand focus and intensity. It’s all part of building a business I am a firm believer in.
    What advice do you have for anyone looking to follow in the same footsteps?
    Take risks. Don’t listen to the noise. Take a leap of faith, and don’t look back. Most importantly, embrace failure, because every setback brings you one step closer to success. Don’t be afraid to pivot, I walked away from a 13-year career in finance to start from scratch in an entirely new industry. It is never too late to follow a calling but do it with clarity. Know your why, stay consistent, and never underestimate your inner power.
    What is the best piece of advice you ever received?
    No one else will write your story for you, you have to write your own recipe for success. Mine involved courage, discipline, a relentless belief in my vision, and a willingness to start over, even when the odds weren’t in my favour. Once you realise that you don’t need permission to begin, everything shifts.

    And what is the worst advice you ever received?
    “Play it safe. Give up. Don’t open in Saudi Arabia. You’re over 40 years old, it is not time to take risks. Think of your kids you don’t need to take bold moves now. Stay in your comfort zone.” If I had followed that advice, I’d still be in banking, comfortable, maybe, but constantly wondering “what if?”
    Playing it safe doesn’t build dreams. Growth comes from taking risks, leaning into discomfort, and saying yes to the things that scare you. That’s where real transformation begins.
    What has been the biggest challenge you had to overcome?
    The transition from banking to design was a radical shift, but the real challenge came in 2019, I faced another major challenge that pushed me completely out of my comfort zone. It was a pivotal moment where I made the conscious decision to give my last push to the business, and that was the turning point in my transformation. Since then, we have experienced double-digit growth, turning The Bowery Company into a multi-million dollar business. Today, our 10,000 square-feet flagship showroom in Riyadh stands as a symbol of that success. But none of it came easy, it came from showing up, again and again, and trusting in the magic of your dreams. Never give up. You’re stronger than you think.

    What are your goals for the future?
    To expand across Saudi Arabia and the wider GCC, deepen our collaboration with Vision 2030 projects, and keep driving the conversation around sustainability in design. I also want to mentor and support other women taking the leap into entrepreneurship. Ultimately, The Bowery Company is about more than bringing design home and beautiful interiors, it is about living courageously, consciously, and beautifully.

    How many people are in your team now and did you start out alone?
    I began this journey as a solo founder, with past experience making me aware that co-founders can sometimes introduce strife and turmoil in a business. Over the past three years, I have carefully built a lean team of five experts. Each team member has ownership of their respective department, allowing us to fill each other’s blind spots, and be accountable to one another, for our combined success. We passionately support each other, operate at a high level and continuously challenge each other to improve and aspire to be better. This collaborative spirit is instrumental to our growth and success.

    As a tech entrepreneur, what would you advise for those looking to follow the same path and those who are starting out?
    ∙ Be grateful and stay humble – not everyone has the opportunity to do something extraordinary.
    ∙ Prepare yourself to sacrifice the “normal” – if you see this as your life, you’ll do good. If it’s a job, if it’s “work”, you probably won’t.
    ∙ Be obsessed with your industry. I live and breathe hospitality. Be outrageously persistent, knock down every door, and always find another way forwards.
    ∙ Stay scrappy, pivot quickly and make decisions; there is no right or wrong. Be careful who you take advice from and be extra careful who you take money from.
    ∙ Find your team – they will make every day better.
    ∙ Ultimately surrender. Do everything you can and then believe it will be.
    What were the challenges you overcame and how did you tackle this?
    Being a female founder in the tech industry can be particularly challenging. Female founders often face disparities in securing funding and high valuations as males tend to favour male-led startups, leading to a significant gender gap in investment opportunities, from both angels and venture capitalists. Gender biases can also lead to stereotypes that undermine the credibility of female founders. This can affect how our ideas are received, how seriously we are taken in male-dominated environments, and it can be harder for us to establish connections, mentors and networks. Our company ethos does not allow bias and stereotypes to prevent progress. We have strengthened our business with an advisory board and strategic investors who share their expertise and experience to advance onezone’s mission.
    This is The Discovery Issue – what has been a recent game changing discovery?
    We see a unique opportunity to develop an AI product based on our curated dataset. In an industry where artificial intelligence has struggled to deliver expert recommendations due to a reliance on broad data scraping, onezone can leverage its specific, high-quality, curated content to provide meaningful insights and recommendations that truly resonate with our users. This discovery enhances our value proposition and positions us for future growth and innovation in the hospitality sector.
    Another exciting discovery has been the recent realisation that our platform is actively driving consumer trends. More users are exploring new places thanks to our app, which highlights incredible spots in their vicinity. We’ve received feedback from self-proclaimed foodies who initially downloaded the app skeptically, only to find themselves pleasantly surprised by the number of exciting restaurants they had never known existed nearby. Additionally, we’ve discovered that the next generation of consumers lacks a centralised, curated source for private dining rooms and event spaces. By building a trusted brand, onezone has the opportunity to fill this gap in the market, meeting the needs of both our users and partners. This emphasises the value of building a two-sided curated hospitality marketplace.
