    The showstopper of Dubai’s restaurants delves deep into its 12-year journey

    When it comes to being the crowning jewel of the restaurant space in Dubai, Zuma is certainly one of the strongest contenders to take that title.
    Having been at the forefront of the F&B space in the emirate for 12 years, Zuma has continued to be a staple for restaurant-goers in Dubai. With impeccable service, an unbeatable menu, a stellar venue and its household name, the contemporary Japanese restaurant has stayed at the centre of the restaurant scene despite the ever-growing and crowded market in Dubai which truly makes the establishment a showstopper.

    Emirates Woman sat down with Zuma’s owner and founder Rainer Becker to find out what brought Zuma to Dubai 12 years ago, how the restaurant has lasted the test of time, Zuma’s hero dishes and what it takes to stay at the top of your game in such a competitive space.
    Can you talk us through your career history?
    I trained in some of the most prestigious kitchens in Germany, including Goethehaus in Bensberg, Koenigshop in Munich and I eventually became Chef de Cuisine in the Hyatt Regency Hotel in Cologne, where I stayed for three years.

    I then had a “breakthrough” moment when I was promoted to Executive Chef of Park Hyatt Sydney, in 1992, a role which I very proudly accepted. I was there for two years and gained some recognition including being awarded Executive Caterer of the Year. Following this time in Australia, in 1994, I became Executive Chef in the Park Hyatt Tokyo, where I was in charge of launching and running all of the five hotel restaurants. I stayed there for six years before returning to London with dreams of opening what is now Zuma.
    What eventually brought you to Dubai?
    We opened Zuma Dubai in 2008, four years after opening Zuma London and one year after opening Zuma Hong Kong. At the time, and to this day, our decision to open in a specific location is really driven by our customer base. Cities such as Hong Kong and Dubai are where our customers travelled for work or for vacations and it made sense to follow our clients.
    How does the food and beverage industry here differ from other places around the world?
    When we first opened Dubai it was a very different beast! The market has changed significantly in the 10 plus years that we have been open. It is now a lot more competitive; it is a crowded market but no more than anywhere else, you just feel it more because it has happened so quickly. I think this is a positive though, you need to be at the top of your game all the time to remain a market leader.

    Having first started in London, what was the appeal of bringing Zuma over to Dubai?
    I probably answered this earlier, but it was our customers! Aside from that the other deciding factor was my business partner, Arjun Waney, whose brother resides in Dubai and had for many years. He explained to us that there was nothing like Zuma in the marketplace and he felt we would do well there. The rest is history!
    You’ve just celebrated an incredible milestone of being named the top bar in the Middle East. What does this achievement feel like?
    It’s wonderful! I could not be prouder of the team. I never would have imagined this after 12 years. It really illustrates how hard everyone works to be “at the top of their game”.
    You’ve really paved the way for a lot of international brands to come to Dubai. How do you ensure Zuma stays ahead?
    I believe competition is very healthy, it drives the business forward and forces you to strive to be consistently better. Product and consistency are key! Additionally, I believe all elements within a restaurant hold equal importance, the design, service, food, drinks, lighting, music. We have all been out for dinner and had great food but if the service is not up to scratch you are not likely to return. We work incredibly hard as a business to ensure that all areas are of the highest standard.
    What are the hero dishes, in your opinion, at Zuma?
    Oh, that’s a tricky one but I would probably go back to some of the original Zuma London dishes. My hero dishes are the chicken wings with sake, sea salt and lime; they are very simple but have just the right level of sweet, salt and acid. Additionally, the tuna tataki; sliced seared tuna with chilli daikon and ponzu sauce is a particular favourite of mine. To be honest, there are too many hero or signature dishes to name. Others include the Chilean sea bass, spicy beef, yellowtail with ponzu – the list goes on!
    Who would you say your chef inspiration is?
    There are too many to count but I would definitely say Alain Ducasse inspires me, he draws on classic techniques and puts a contemporary twist on his dishes. In the Japanese food world, Chef Hirohisa Koyama changed the way I saw Japanese cuisine and was very much ahead of his time. And I know she is not a “chef”, but my mother was a really good cook and I remember her cooking dinner whilst I was doing homework at the kitchen table, I would often jump up and try to get involved.
    What are the hurdles you’ve experienced during your career?
    Sometimes naivety and enthusiasm are our best business gifts. I never opened Zuma with a concise business plan for the global reach it now has. I only ever wanted to open one restaurant, and I never thought beyond that at the time when I was planning the original Zuma. As a result, I sometimes struggled with the idea and speed of the business expansion, you worry about being able to consistently deliver. But here we are and I am very proud of what we have built and the team behind it all.

    On the opposite end of the spectrum, what are the milestones?
    I always wanted to cook. I used to come home from school and my mum would be cooking dinner. I am not sure if that was a driving force or impacted my choice but for as long as I can remember I enjoyed and wanted to cook. My father, however, decided it wasn’t much of a career so, in a bid to dissuade me, he sent me to his friend’s restaurant to work there one summer, in a desperate attempt to put me off. I got stuck in doing basic cooking and kitchen duties – it was hard graft! Instead, I came back more fired up than before. From that moment, he supported me so that was a pretty big milestone. My career took me to Australia and from there Japan where everything changed, both experiences were very influential to me and therefore pretty big milestones.
    What do you see next for Zuma Dubai?
    The team are driving the business, innovating and achieving great things – I would be happy to see that continue in the years to come.

    20 incredible women Emirates Woman championed in 2020

    As 2020 comes to a close, many will be reflecting on the year that has been. With all of us having to face some major challenges this year, we’ll have also learned some incredible life lessons from experiences and also inspiring people throughout 2020.
    This rings true, particularly for Emirates Woman. We’ve spoken to and championed some incredible women this year and we have learned many valuable philosophies and lessons from their wisdom and inspiration.

    So, as the year draws to a close, EW is looking back on just some of the inspiring women we championed this year.
    Amina Muaddi

    Gracing the cover of EW‘s ‘Go Your Own Way Issue’ in April, designer Amina Muaddi is someone who epitomises individuality and grit to go it your own way. In our exclsuive interview with her, she explained that she laways knew she wanted to be an entreprenuer.
    “After working with fashion magazines for a while I realised that I should not put my dreams on hold and I decided to start my first shoe company,” she said. “There is no right time, sometimes things work out sometimes they don’t. But you have to be brave and start, take the first step and then be ready for the adventure.”
    Fatma Al Otaiba

    Designer Fatma Al Otaiba started this year (and new decade) with a bang, by launching her new luxury brand ODEEM. For the last 10 years Al-Otaiba dreamt of starting her own handbag brand. The Dubai-based luxury label which aims to focus on timeless leather goods. Combining tradition with eclecticism, the designs draw on different textures and details that are sure to turn heads.
    This year, Al Otaiba has taught us about many things to do with mindfulness and gratitude, what it takes to be an entreprenuer and her pride for being an Emirati woman.
    Ola Farahat

    Our cover star for May’s – ‘The Mindfulness Issue’, Ola Farahat is a rare combination – educated, beautiful and incredibly down to earth. With 1.2 million followers on social media, Farahat is the perfect exmaple on how to stay mindful and grateful. Despite having been in the social media space for many years, she explains it’s still a “dream”.
    “I just pursued my hobby and believed in it,” she told EW. “I appreciated every person who admires me because they made my dreams come true.”

    As the cover star for ‘The Summer Escape Issue’, Rania Fawaz showed us on a 12-hour shoot in 45-degree heat that she is focused, free-spirited and unfailingly hard-working. As she’s built her name in the social media space she told us how there is “no off switch”.
    “I think the key to being sane is always to be yourself across all platforms, that way it was not draining and I didn’t feel like I had to have time for myself,” she said. “I feel like the entire day is time for myself because of the way I choose to be.”
    Her Highness Sheikha Sana Al Maktoum

    This year Her Highness Sheikha Sana Al Maktoum launched her eponymous brand Sana Al Maktoum Fine Jewellery. However, her jewellery brand is so much more than just jewellery, Her Highness is encouraging women to find their inner strength through one treasured piece at a time. Her first collection for Sana Al Maktoum Fine Jewellery entitled ‘My Treasure’ is an ode to her late grandmother, using butterflies as the symbol.
    “Butterflies are symbols of transformation and beauty and she grew up at a time when options were limited for women, but she didn’t let that stop her,” Sheikha Sana she told EW in our exclusive interview with her. “She found a way to shine and to help others shine which is why I consider her a treasure.” Sheikha Sana also explained that each piece is “designed to be worn alone or layered together, each creation honours the memory of a remarkable woman and encourages the wearer to embark on a journey to find her own inner treasure”.
    Faiza Bouguessa

    Faiza Bouguessa is the brains behind the namesake label Bouguessa. The globally-championed has mastered exactly how the perfect cut inspires confidence. “Bouguessa is made to inspire confidence,” the designer told EW. “The ethos of the brand is all about minimal and sophisticated elegance for the modern woman. We recently announced our wish to move toward more sustainable practices, to allow women to feel good and do good when wearing our designs.”
    Her Highness Sheikha Latfiah Al Maktoum

    Gracing the cover of September’s – ‘The Power Issue’, Her Highness Sheikha Latifah Al Maktoum. As a truly powerful and inspirational figure, Her Highness knows exactly how to keep her mind in champion mode.
    “I learned I can only control what I can do. I can only control my actions not my surroundings or other people’s actions,” Her Highness said on overcoming challenges. “So why get frustrated by things you cannot control, it will not change anything? You have to make the best of every situation and there is always a light at the end of the tunnel even though sometimes you cannot see it.
    Her Excellency Dr Maryam Matar

    Having had the dream and desire to serve in the medical field since she was young, Her Excellency Dr Maryam Mohamed Fatima Matar MD, Ph.D has become a pioneer and a visionary in the healthcare space in the UAE.
    Not only is Her Excellency a pioneer in the medical space, she is a role model for many women in the UAE seeking to succeed, whether that be in healthcare or other industries. Additionally, she’s able to facilitate change, paving the way for other women and girls in the region. “My role as the Chairperson of UAE GDA and being the most powerful women scientist, gives me huge opportunity to make change and influence decision-makers to bring more learning and career opportunities for girls and women,” she told EW.
    Khulood Thani

    Khulood Thani, cover star for October’s – ‘The Bravery Issue’, combines her entrepreneurial spirit and extensive experience in culture and design and is focused on bringing innovative global fashion to an international platform. “I always trust my gut feeling, I have a special connection with the universe around me, and I like to follow the messages it reveals to me,” she told us.
    Captain Salma

    Captain Salma Al Baloushi is the first Emirati female to rise to First Officer’s rank at Etihad Airways. Earlier this year, Captain Salma spoke to us about what it takes to become a woman of firsts.
    “We get our mental obstacles from people around us who try to downgrade and discourage us from going ahead with things they’re not familiar with,” she said of her journey to success. “People kept telling me aviation was not for me, or this field was only meant for men, but my batch mates believed the opposite. It’s exhausting, but with the right support of your family, your company and a good understanding of the work environment, it’s possible.”

    Alison Loehnis, President of Net-A-Porter and Mr Porter is an incredible woman and a true power player. Combining an innate sense of style with one of the sharpest minds in the industry, we previously spoke to her about what it takes to continually stay one step ahead and perpetually innovate in an industry as fast-paced as fashion.
    Her Royal Highness Princess Lamia

    Her Royal Highness Princess Lamia Bint Majid Al Saud has made it her life’s mission to help others, particularly advocating for women. Through her incredible philanthropic work, Her Royal Highness is changing the world, one incredible story at a time. “If you are fortunate enough to have access to resources or a raised platform, it is your responsibility to support and empower those who are not as fortunate,” she told Emirates Woman.
    Shaima Saleh Al-Husseini

    Shaima Saleh Al-Husseini is the managing director for the Saudi Sports for All Federation (SFA) and has been vital in the development of women’s sport in the Kingdom. She was right at the forefront when the Saudi Greens Team, which became the first Saudi women’s team ever to join an international event. In 2019, the Greens competed in the Global Goals World Cup (GGWCup) – a tournament that was launched to champion the role of sport in achieving the United Nation’s Sustainable Development Goal (SGD) No. 5.
    Al-Husseini is incredibly proud of the change that’s happened in the Kingdom, and she only hopes this continues, she told EW earlier this year. “I hope to see more Saudi women become the faces of sport in Saudi,” she told EW recently. “Already we have a few very well-known professional athletes and some fitness professionals that are very well-known at the community level as well.”

    Our cover star of November’s – ‘The Fine Jewellery Issue’, Her Highness Sheikha Mozah Al Maktoum is inspiring the new generaton of incredible women having risen to great heights in the aviation industry. “I’m most proud of becoming the first Emirati woman to join the Dubai Police as a helicopter Pilot,” she told us of her proudest moment. “Serving my country by doing what I love doing most is simply the best feeling, and I am deeply grateful for it.”

    Dubai approves the Pfizer-BioNTech vaccine which will be free of charge

    Dubai has approved the Pfizer-BioNTech vaccine to be administered in the emirate.
    It was announced via the Dubai Media Office Twitter account that the Dubai Supreme Committee of Crisis and Disaster Management will launch an “extensive vaccination campaign against COVID-19” on Wednesday, December 23.

    The Pfizer vaccine, which has been revealed to be 95 per cent effective in studies, will be free of charge.

    Neighbouring nation Saudi Arabia has also already approved the vaccine as well as, the UK, Canada and USA.
    The first batch of the Pfizer-BioNTech vaccine arrived in Dubai from Brussels on Tuesday night, per a post from the Dubai Media Office. It was shipped on an Emirates SkyCargo flight.

    This approval of the Pfizer-BioNTech vaccine comes after a trial began in the UAE over the summer testing the Sinopharm vaccine.
    After three months after the COVID-19 vaccine began to be administered in the UAE a couple of months ago, and it’s now been determined that it is 86 per cent effective following the trials.
    The Sinopharm vaccine has been officially registered in the UAE, with health authorities saying that the “analysis [from the trial of 31,000 people] shows no serious safety concerns”.
    High-up government officials including His Highness Sheikh Mohammed bin Rashid al Maktoum, the Vice President and Prime Minister of the UAE and the Ruler of Dubai, Her Excellency Noura bint Mohammed Al Kaab, the Minister of Culture and Youth and more have already received the vaccine.

    The rules for entering Abu Dhabi for residents and tourists have been updated

    While Abu Dhabi reopened its borders to tourists back at the end of September, a strict 14-day quarantine has been in place for all visitors, residents and citizens alike.
    However, the rules for entering the UAE capital have now been eased, alongside COVID-19 testing requirements being updated.

    The Abu Dhabi Crisis, Emergencies and Disasters Committee announced that given the success of the precautionary measures taken the emirate has been “maintaining a low rate of confirmed cases [and thus] Abu Dhabi will welcome back international tourists from 24 December 2020”.
    As part of the new guidelines, it’s been confirmed by the committee that all travellers must receive a COVID-19 PCR test negative result within 96 hours of their scheduled departure. After touching down in Abu Dhabi, a second PCR test is required upon entering the emirate.

    The committee has also identified some “green” countries, whereby visitors from those countries will be allowed into Abu Dhabi when they receive a negative result. However, for those not on the green list, a period of self-isolation for 10 days is currently in place.
    Furthermore, it’s been outlined that all tourists and travellers are required to take a PCR test “on day six of entry into Abu Dhabi for those staying for six consecutive days or more, and on day 12 for those staying for 12 consecutive days or more”.

    Similarly, there have also been changes for entering Abu Dhabi via the road border.
    As of tomorrow, December 24, those who are entering Abu Dhabi are permitted to enter with having a valid negative COVID-19 PCR or DPI test within 72 hours. The rules previously stated that it needed to be within 48 hours.

    It should be noted the 10-day quarantine time still applies if you’re crossing the road border and have just arrived from a country, not on the green list.
    Meanwhile, as has been the case since vaccine trials began in the UAE, those who took part in phase III are exempt from being tested.

    Co-Founders of Dubai-based Glitterbox UAE Lara and Nadine Elias created a business from a love for all things shiny. With party season approaching, we asked what it takes to create an empire of fun.
    What do the first 30 mins of your day look like?
    Each day can be completely different depending on how busy we are, but usually replying to emails and checking the Glitterbox Instagram is a priority as we get a lot of enquires through our social platforms.
    What made you take the leap to start the brand and what were your most important considerations?

    We were on a night out putting glitter on each other when a group of girls crowded around, waiting for their turn, that was it – Glitterbox was born a couple of months later and back then it was just us and a suitcase full of glitter. We had no idea our small idea would put glitter on the map here in the Middle East. It never felt like work because we were able to spend time with one another yet also make people smile and feel good. That was the most important thing to us – that we enjoyed what we were doing.
    What advice would you give to your younger selves starting out?
    Don’t take everything to heart. When we started out not everyone understood what our service was however we were consistent and continued – we didn’t let anyone dull our sparkle.

    What have been your biggest hurdles this year and how have you overcome them both independently and together?
    Just like any company that thrives during event season here in Dubai we have really missed doing what we love best – spreading our sparkle. With lockdown and new restrictions for events, we’ve not been able to shine as much as we’d like to but this gave us time to work on other exciting Glitterbox projects. We reached out to friends in our creative circle for help with our products and making them come to life on the website, most importantly remaining a team and supporting one another during a difficult time.
    What inspired you to create the biodegradable glitter range?
    With the world shifting to find ways to live more sustainably, we were also conscious about the impact we may be having on local ecosystems. We offer the biodegradable glitter at all our glitter stations so guests have the option to choose. We are also the first company here in the UAE to source a completely plastic-free glitter, which “shimmers” rather than sparkles due to the absence of aluminium and plastic in the glitter. The glitter is proudly made from plants, not plastic.
    How has social media helped scale the business and which platform do you prefer to use?
    We love Instagram for sharing our favourite images – icons, sequins, disco and of course our events. Instagram has become more of an outlet for us to share our thoughts and inspiration as well as for our products.

    What events are the core of your business both pre COVID-19 and now and has it changed?
    Event season is sadly still non-existent although we are looking forward to next year and we have exciting events planned for NYE. This time last year you would be able to find us all over Dubai from festivals to disco themed events. 2020 finally gave us the push we needed to develop our other ideas and push the brand further with an accessories range. Our sequin facemasks have been extremely popular. We also put together our range of glitter party packs so you can shine safely at home.
    Having worked with a portfolio of luxury clients, how do you create a bespoke service for each?
    We work closely with each brand to bring the element that best fits their event, location and clientele – we offer a range of services as well as the glitter. For example, guests can choose from a selection of face jewels or boho-themed face paint and UV colours. For the Hermès Twilly d’Hermès Eau Poivrée launch we sourced face jewels that matched the perfume bottle and pink disco theme of the event or at Blue Marlin’s annual Burning Beach event guests could add tribal designs to compliment their glitter. Our glitter gang is a group of friendly artists who are selected for your event depending on your requirements.

    What is the most extravagant theme you’ve ever been asked to create?
    We put a lot of thought in making sure the glitter station is a talking point at each event. Working with Nike last year where we helped the “Nike Salon” come to life with the creative team was definitely one to remember. Guests could choose Nike glitter “swooshes”, glitter hair tattoos and a custom braid bar with a selection of charms to add to their braids which we sourced. Have you ever heard of an “Intergalactic Bedouin”? We joined this themed post-wedding party where the bride flew us to Jordan to complete her incredible costume with our glitter and then all the guests. We made everyone shine in a valley between two mountains in Wadi Rum. It was like something from a film! There are so many incredible parties we have had the pleasure of joining however at this time of the year working with Swarovski is one of our favourites where we literally ‘frost’ the guest with glitter and crystals to match the jewellery!
    This issue is ‘The Party Issue’ – how will you be celebrating this year?
    As you can imagine Christmas is our favourite time of the year, all the sequins come out and most nights are an excuse to get dressed up. Even if we aren’t glittering faces as much we will be shining on our sofas! You can usually find us at The Maine – one of our favourites with our family in the run-up to the big day.
