    Gohan

    Found down a fridge-lined corridor in the French restaurant, Japanese restaurant and bar Gohan is a dark, moody, tucked away space. This intimate space can seat 30 diners at a time with the DJ spinning to some of the most eclectic tunes all night. “The main guideline when it comes to Gohan was to get as close as the authentic Japanese food with a twist of modernity and street food”, Chef Gilles Bosquet told Emirates Woman in an interview. It’s open from Monday to Friday 12pm to 4pm and for dinner from 7pm to 2am daily.

    Origami

    For a low-key dining experience, Origami’s newest redesigned space at Jumeirah boasts a stylish fitout along with fine array of new menu items.
    Tucked away in Jumeirah’s Al Souq Mall in Fishing Harbour 3, this homegrown hidden gem serves a fine selection of signature small plates, creative sashimi offerings, and traditional nigiri using the freshest ingredients. Highlights include the japanese potato salad, sashimi tartare, black cod, bluefin tuna, and yellowtail roll.
    The redesigned space features a moody atmosphere blended with sleek and minimalistic interiors reminiscent of alleys of Japan. The counter seats are perfect for solo dining or for guests who want front-row views and enjoy the culinary artistry and action up close.

    Hawkerboi

    What started as one of Dubai’s most sought-after supper clubs has now gone on to open its own restaurant. From first hosting in secret locations around Dubai, this highly-anticipated venue takes inspiration from the founder’s life in the Far East. Known for his concealed identity, Hawkerboi is considered the Banksy of Dubai in the culinary world and never fails to amaze his diners with exquisite dishes that represent his travels. With delectable dishes such as Wagyu Skewers with Peanut Nahm Jim, Charcoal Short Ribs and more, the space is designed for with red neon piping to balance the underground foodie community in the city. Designed by its parent company EatX, this space projects a vast open kitchen by mastering the art of balance and theatre. Located at The Park, Jumeirah Lake Towers, the restaurant is open from Sunday to Thursday 7pm to 10pm and Friday and Saturday 7pm to 11pm.

    Honeycomb Hi-Fi

    Given the title of Dubai’s first listening bar, Honeycomb Hi-Fi brings to life a lavish record store, a High-Fidelity sound system, warm and minimal interiors designed for quality acoustics, and an izakaya kitchen to round out their vision. With a casual Japanese menu inspired by a traditional izakaya, guests can indulge in hot, binchotan grill and rice/noodles sections with a variety of dishes to share.     Located on the ground floor of the Golden Tulip Hotel in Al Barsha, its entrance is straight out of Tokyo and designed to resemble a traditional storefront with lanterns, handwritten signs, and warm colours. WAWA takes a modernized touch on Korean-infused Japanese cuisine with a varied selection of spirits, Maki, Jako Fresh and WAWA platters. This low-key spot is definitely a must-visit.

    Adaline

    This classic Italian restaurant and supper club has opened in DIFC, Dubai. Adaline is set to transform Dubai’s dining and nightlife scene with their vibrant dinner experience. The restaurant is a cornerstone of Dubai’s exciting social scene, seamlessly blending old-world charm with modern flair, and reimagining the allure of a grand, intimate dinner party.     Inside the secret supper club in DIFC where photos are prohibited

    The most exciting new secret supper club in DIFC, Adaline, is now open. We discuss what making it work looks like with co-founder Chef Izu Ani.
    Tell us about your background.
    Growing up in London, my passion for the kitchen began during my time at school. For me, cookinghas always been a way to express happiness and share this with others. After my studies, I first gained experience working across London before moving to France, where I met my wife. In 2010, I moved to Dubai to help open La Petite Maison. The UAE has since become a foundation for my career. It has provided me with countless opportunities, enabling me to develop my own restaurant concepts with my partner Evgeny Kuzin. Together, we launched GAIA, La Maison Ani, La Petite Ani, Izu Burger, Shanghai Me, Scalini, Alaya, Piatti by the Beach and most recently, Adaline. In recent years, we have focused on taking our restaurants from Dubai to a global audience. We first opened Gaia in Monaco followed by Doha, and Marbella. We also opened GAIA in Mayfair and La Maison Ani in Knightsbridge, London, which has been such a humbling experience – having grown up there, it will always be home to me.
    Talk us through the concept of Adaline?
    Adaline is a contemporary supper club that blends vibrant dinner experiences with Old-School Italian cuisine and live music, such as jazz and modern soul, to offer an elevated dining experience for guests. Our menu showcases the culinary heritage of Italy, celebrating timeless Italian dishes where each plate tells a story. To complement the cuisine, the bar offers a selection of classic Italian aperitifs and cocktails, giving guests a blend of the familiar and the unexpected.
    Every detail is designed to leave a lasting impression – was this the plan from the outset?
    Our interiors capture the depth and elegance of the Jazz Age, where glamour and sophisticationmeet in a celebration of the senses. The attention to detail and commitment to luxury at Adaline ensures an unforgettable dining experience for guests.

    Guests can experience jazz and modern soul – how important is music in the offering?
    Music is at the core of the Adaline experience, with the live performances designed to evoke a sense of nostalgia. Each night, guests may enjoy live bands blending jazz, modern soul, and anthems from the 1990s and 2000s. All of this enhances guest’s dining experience.
    The experience highlights old school Italian cuisine – what elements stand out?
    We wanted to create an element of nostalgia. The warm memories of Italian elegance are woven throughout the concept, from the menu to the ambiance and vivacious entertainment. There is something so alluring about the past, an understanding that we can never experience the same moment twice, yet somehow, we aim to re-create and enhance our fondest memories. The food we eat provides such a beautiful way of connecting with the past and the future, of celebrating our history while enjoying the present moment. I love to see a full table of dishes to share between friends and family. Start with the Tuna Tartare and Beef Carpaccio, alongside the Parmigiana, Calamari and the Adaline Cesar salad for a blend of flavours and textures. For mains, I like to indulge in something heart-warming and nourishing, like the Tagliolini All’Astice, a beautiful lobster pasta, and the Wagyu Tagliata.
    How is the supper club culture growing in the Middle East?
    People are looking for more than just a meal – they are looking for connection, for excitement. Our guests seek an atmosphere that combines culinary excellence with entertainment and social interaction. Adaline exemplifies this trend, offering a fresh alternative to traditional dining by blending high-end cuisine with elements such as jazz, and classic entertainment.

    What advice would you give to your younger self?
    One of the greatest lessons that my mother taught me is to show up every day, to keep going and keep striving towards your dreams. She showed me how to make things happen, instead of waiting for things to change. There is so much beauty and power in putting in the work and taking daily action.
    This is The Winter Escape Issue – where are you travelling to this year and what will you be packing?
    This winter, I will be spending time in Monaco and the South of France; followed by London to visit my family and our restaurants there, before travelling back to welcome the new year with my loved ones in Dubai. I travel quite a lot and have developed quite a streamlined approach to packing. I find the more organised and structured I can be about my wardrobe, scent and daily non-negotiables; the more space, calm and mental clarity I must handle everything each day brings.

    Chef Tetsuya Wakuda of Sagetsu on his culinary philosophies and secrets to success

    A newcomer in Dubai, Sagetsu by Chef Tetsuya Wakuda is a prestigious addition not only at The Link’s culinary constellation of dining concepts, but also to the city’s flourishing yet competitive gastronomy space.
    Tucked away in One&Only One Za’abeel, Sagetsu’s interior boasts of an intimate setting and a curated menu incorporating familiar yet complex Japanese flavours infused with French precision and plating artistry to offer standout dishes including the iconic Botan Shrimp served with a heap of caviar atop a bed of sea urchin, the melts-in-your-mouth Aburi Saroma Wagyu Beef, and the Carpaccio of Wild-Caught Japanese Bluefin Tuna with truffle shavings – each as memorably delicious as they are beautiful.
    A testament to his culinary genius and meticulous way of working, it comes as no surprise that two-star Michelin Chef Tetsuya achieved his first Michelin star for Sagetsu just a couple of months after opening.
    Here, Chef Tetsuya shares with Emirates Man his culinary philosophies, influences, and secrets to success at Sagetsu.
    Talk us through your career journey to date.
    My culinary journey began in Hamamatsu, Japan, where I honed the discipline and precision of Japanese cuisine. Moving to Sydney in the 1980s was pivotal, leading to the opening of Tetsuya’s in 1989, where I fused Japanese and French influences. In 2010, I launched Waku Ghin in Singapore, bringing a focus on seasonal ingredients and craftsmanship to a global stage. At Sagetsu, I now celebrate Japanese culinary traditions while innovating to create meaningful dining experiences. Each step in my career has been about learning, evolving, and sharing the joy of food.

    What led you to bring your culinary expertise and expansion to The Link at One Za’abeel, Dubai?
    Dubai is a city that thrives on innovation, cultural diversity, and a deep appreciation for the art of fine dining, which aligns perfectly with my culinary philosophy. When I was introduced to the vision of The Link at One Za’abeel, I was immediately captivated. Its iconic design and commitment to curating extraordinary experiences provided the ideal platform to bring Sagetsu to life.
    Dubai’s dynamic culinary scene is a melting pot of global influences, and I saw an opportunity to contribute something truly unique—Sagetsu’s harmonious blend of traditional Japanese techniques with contemporary flair. For me, it’s about creating more than just a meal; it’s about crafting a journey that celebrates precision, balance, and artistry. The setting at The Link elevates this experience, offering a seamless connection between stunning architecture, immersive ambience, and exceptional cuisine.

    Tell us more about the ambience of the restaurant. What can guests expect from their dining experience at Sagetsu?
    Sagetsu embodies a profound connection between culinary artistry and the celestial world. Inspired by the beauty of astronomical influences, each dish at Sagetsu reflects a harmonious balance of flavours and textures crafted with meticulous attention to detail. The dining experience transcends mere food; it’s a journey through the stars, where every ingredient and technique is carefully chosen to evoke a sense of wonder and delight. It’s an honour that Michelin has recognised Sagetsu’s innovative approach, and I am thrilled to share this unique dining concept with gastronomes seeking an unforgettable experience
    How did you conceptualise Sagetsu menu – can you tell us more about your creative process?
    The menu at Sagetsu is a reflection of my culinary philosophy: simplicity, seasonality, and an unwavering dedication to the finest ingredients. I drew inspiration from the changing seasons and the interplay between tradition and innovation when conceptualising the menu. Each dish is crafted to honour the purity of Japanese cuisine while integrating modern techniques and a global perspective.

From there, I focus on how each element can harmonise to create a balance of flavour, texture, and presentation. The menu at Sagetsu is designed to take diners on a journey, celebrating the delicate nuances and bold expressions of Japanese culinary art.

    To you, what are the hero dishes to try at Sagetsu?
    One of our signature dishes, the Botan Shrimp, brings together Hokkaido sea urchin and Sagetsu Oscietra caviar, a combination designed to highlight the delicate textures and rich umami of the ocean’s finest ingredients. Each bite intends to capture the rare freshness and flavour we prioritise in our kitchen.
    Another standout is our Japanese Bluefin Tuna Carpaccio, adorned with an Australian winter truffle and a bitter seasonal salad. This dish contrasts the buttery richness of wild-caught tuna with the earthy notes of truffle, creating a memorable harmony of flavours.

    Do you remember the first meal that really left an impression on you?
    My most memorable dinner was at Plaza Athénée in Paris, where Alain Ducasse’s philosophy of naturalness took center stage. The focus on simplicity, sustainability and the purity of flavors created an experience that was not only unforgettable but deeply inspiring. Each dish celebrated nature in its truest form, leaving a lasting impression on me.
    How would you describe your culinary style and what are the driving factors behind your approach to food?
    My culinary style is deeply rooted in simplicity and respect for ingredients. I focus on enhancing natural flavours and textures while incorporating innovative touches that surprise and delight the palate. Each dish at Sagetsu is crafted to showcase the essence of Japanese cuisine with a contemporary twist, offering a memorable dining experience that resonates with locals and international guests.
    Being a chef-entrepreneur, what did this teach you about yourself, professionally and personally?
    Being a chef-entrepreneur has taught me resilience, adaptability, and the importance of innovation. Professionally, I’ve learned to think beyond the kitchen, understanding how every detail contributes to the guest experience. It’s been humbling, showing me the value of trust, passion, and the ability to connect with people through food.

    How has setting up restaurants in countries with such different cultures influenced your approach to food?
    Sagetsu’s swift rise to popularity is a testament to its unique blend of culinary artistry and cultural resonance. We meticulously crafted a menu that showcases the finest ingredients and celebrates the essence of Japanese cuisine in a contemporary context. Unlike my other concepts, Sagetsu embodies a refined simplicity that allows guests to experience the purity of flavours and textures, drawing inspiration from traditional Japanese culinary techniques while embracing modern interpretations. This approach, combined with the serene ambience and impeccable service, creates a dining experience that resonates deeply with our guests, elevating Sagetsu to its current acclaim.
    Sagetsu has been awarded one Michelin-star in the Michelin Guide Dubai – how does this feel to accomplish this?
    I was deeply honoured by Sagetsu’s recognition with a Michelin star, particularly within just four months of opening. This achievement is a testament to the dedication and passion of our team, who have tirelessly crafted an exceptional dining experience blending culinary precision with a celebration of nature. While the speed of this recognition was surprising, it reinforces our commitment to delivering memorable dining moments. We are excited about the journey ahead and continuing to exceed our guests’ expectations at Sagetsu.
    You’ve had such an incredible career. What advice do you have to aspiring chefs looking to make a mark?
    To aspiring chefs looking to make their mark, I would say this: Always respect your ingredients and let their natural essence shine through. Be passionate and dedicated to your craft, and never stop learning. Patience and attention to detail are crucial in creating something truly exceptional.     Chef Izu Ani on his vision behind the new fine dining destination in DIFC

    Known for its celebration of delectable food, luxurious interior and good music, Shanghai Me has opened the doors for honoring and innovating thousand year old Chinese traditions with Japanese techniques to bring a Pan-Asian fusion menu to its guests.
    Chef Izu Ani discusses the inspiration and vision behind Shanghai Me and the details he made sure to consider in order to create the ultimate fine dining experience.
    Can you walk us through your journey from economics to becoming a renowned chef in Dubai?
    My journey into the culinary world began in London, where I grew up and first discovered my love for cooking in a Home Economics class at school. That class opened my eyes to the magic of food and the way it can spark joy, create memories, and connect people. After my studies, I was fortunate to work at a few hotels in London, which gave me a solid foundation in hospitality. But it was when I joined The Square in Mayfair, a Michelin-starred restaurant, that I truly began to understand the precision and artistry involved in fine dining.
    I also travelled to France, where I spent six transformative years immersing myself in the traditions of French cuisine. I had the privilege to work at some incredible places, including the two-Michelin starred La Bastide Saint-Antoine and the legendary three-Michelin starred Auberge de L’Ill. These experiences were invaluable, teaching me not only technique but also the soul of cooking, how to respect ingredients and elevate simplicity into something extraordinary.
    After spending time in Spain and then London, I felt ready for a new chapter, and that’s when Dubai called. I’m so proud and grateful to call this city my home, with its rich blend of cultures and limitless possibilities, Dubai is beyond inspiring.At the heart of it all, my journey has always been driven by a passion to connect with people through food. Whether in a Michelin-starred kitchen or a family home, food has the power to evoke emotions and memories, and that’s what I strive to capture in every dish I create.

    What were some key turning points or experiences that shaped your career?
    Throughout my career, I’ve come to realize that every experience in life shapes who we are, both personally and professionally. Without doubt, moving to Dubai has been a truly transformative chapter in my career, offering unlimited opportunities and instilling the belief in my culinary vision. The city’s vibrant and diverse culinary landscape inspired me to open my own restaurants, and not only grow as a chef but to also create experiences that resonate with such a diverse range of people.
    I have had the incredible privilege of welcoming members of the UAE Royal Family to our restaurants. Such experiences remind me that every dish tells a story, and it’s these stories that connect us all. Each challenge and triumph has reinforced my belief in the power of food to bring people together and that really inspires my creativity in the kitchen.
    Who or what inspires your culinary creations – are there specific chefs, cuisines, or cultures that have significantly influenced your style?
    Every day, I find inspiration in the world around me, and travel has been one of the most significant influences in my career. Every destination offers something new to learn, whether it’s through different flavours, cooking techniques, or the connection between food and culture. My experiences in Tokyo, Japan, were particularly transformative. The philosophy behind their culture took my breath away, from their deep respect for people, ingredients, and the environment embodies a holistic approach to cooking.
    I believe that as a chef, you’re never done learning, and that makes this career so exciting and evolving. Every day in the kitchen presents opportunities for growth and evolution, whilst weaving my own story and experiences into each dish.
    How has the Dubai food scene evolved over the years, and what role have you played in shaping its growth and diversity?
    The Dubai food scene has undergone a remarkable evolution over the years, transforming into a vibrant and diverse culinary landscape that reflects the city’s multicultural identity. I believe Dubai has affirmed itself as a unique and vibrant international hub for gastronomy. It is such a dynamic and ever-evolving city that inspires and oozes creativity, and the culinary excellence here is a direct representation of the city itself.
    Being a part of that culinary growth and diversity is such a privilege and I am very proud of the homegrown dining concepts we have created that celebrate this, from the elegant Mediterranean ambiance of GAIA, authentic flavours of Shanghai Me, to quintessential French charm of Carine. My vision has always been to foster connections between cultures and food and curate exceptional dining experiences, and reinforcing that food is a universal language that unties people together.
    Expanding our dining concepts globally showcases the growth and diversity of Dubai’s culinary landscape on an international stage. We have launched GAIA in London and Marbella, with Miami due to open early next year. LMA just recently opened in London, and I am really excited about the upcoming launch of Shanghai Me in London in early 2025. This expansion not only highlights the appeal of our unique dining concept but also reaffirms the global interest in the innovative and vibrant flavours that Dubai has to offer. It reflects the city’s ability to influence and inspire culinary trends around the world, proving that Dubai is not just a local hub but a significant player in the global gastronomy scene.

    What inspired you to create Shanghai Me, and how did you balance the traditional Chinese elements with a modern twist?
    Creating Shanghai Me was inspired by my deep admiration for the rich culinary heritage of East Asia, particularly the precision and practice behind the delicate dishes that have taken centuries to perfect, as well as the unique techniques. My vision has always been to honour these traditional elements while presenting them in a way that resonates with contemporary diners.
    To balance traditional Chinese elements with a modern twist, I carefully selected recipes that have been preserved from generation to generation and infused them with playful, innovative twists. For instance, I use locally sourced ingredients to enhance the authentic flavours while ensuring the essence of the original cuisine remains intact.
    Can you share some of the challenges and rewards of developing the menu for Shanghai Me? How did you ensure that the dishes were both authentic and appealing to a diverse audience?
    The beauty of life, much like the culinary journey, is found in the interplay of challenges and rewards. Every obstacle encountered in developing a menu invites reflection and growth, allowing us to embrace the unknown and innovate at the same time.
    With any menu but especially with Shanghai ME, it was imperative that we honour the authenticity of East Asian cuisine and preserve the time-honoured techniques and flavours passed down through generations. Each dish tells a story, steeped in history and culture, and it’s essential to keep those narratives alive, but also ensuring that they resonate with today’s diverse and ever evolving audience.
    Excitingly we are approaching the 5th anniversary of Shanghai Me on November 20th, and I am reminded of my journey as a chef and how it embodies the challenges and triumphs. My aim is always to curate menus that honour culinary heritage, whilst welcoming guests to savour and enjoy exquisite and flavourful experiences that we present. Embracing these challenges not only enriches my craft but also deepens my understanding my appreciation for the culinary traditions we uphold in every dish we create.
    The decor at Shanghai Me is a beautiful blend of 1920s Shanghai and modern elements. How did you envision the overall aesthetic, and what role did it play in creating the restaurant’s atmosphere?
    The decor at Shanghai Me is an intentional blend of 1920s Shanghai glamour and modern sensibilities, designed to create a captivating atmosphere that transports guests to a bygone era. We envisioned a space that really showcases the richness of Shanghai’s history, embodying a refined yet relaxed ambiance where every guest can immerse themselves in the essence of life under the dynasties, and Michele Bonan beautifully brought this vision to life.
    From the stunning terrace, overflowing with bamboo & banana trees evokes the lush green jungles of Asia which creates an inviting and captivating outdoor oasis whilst the stunning lounge and private dining area pay homage to the clandestine gatherings of the golden age, offering an intimate setting that encourages connection and celebration.
    Every design element plays a vital role in captivating the overall experience at Shanghai Me. The aesthetic not only reflects the depth of Shanghai’s cultural heritage but also complements the cuisine, providing guests with a taste of Asian tradition in a setting that feels both historical and contemporary.

    What advice would you give to aspiring chefs who dream of opening their own restaurants?
    When starting out, I encourage young chefs not to look at the prestige, position, or money. When you are at the beginning of your career, your job is to extract as much information as possible. Ask questions, investigate, learn everything, take everything in and experience it all. Looking with the eye of discovery leads you to the knowledge that helps you evolve.
    Don’t focus on the recipes, focus on the ingredients. Study them, speak to them, understand them. Research everything you use. Explore techniques and flavours. Asking lots of questions, gives us lots of answers.
    Having the freedom to create is important, it allows us to keep expanding and growing without the fear of stagnation. We must keep moving forwards, standing still kills creativity. To do something that you haven’t done before, and make something that people appreciate, you have to shake things up. Do something that puts you in a different realm and breathe in the craziness of life.
    Our experiences shape us and make us who we are, teach us our values and allow us to share these with the next generation. Passing on our passions and our knowledge for a beautiful future.

    Found down a fridge-lined corridor in the French restaurant, Japanese restaurant and bar Gohan is a dark, moody, tucked away space. This intimate space can seat 30 diners at a time with the DJ spinning to some of the most eclectic tunes all night. “The main guideline when it comes to Gohan was to get as close as the authentic Japanese food with a twist of modernity and street food”, Chef Gilles Bosquet told Emirates Woman in an interview. It’s open from Monday to Friday 12pm to 4pm and for dinner from 7pm to 2am daily.

    For a low-key dining experience, Origami’s newest redesigned space at Jumeirah boasts a stylish fitout along with fine array of new menu items.
    Tucked away in Jumeirah’s Al Souq Mall in Fishing Harbour 3, this homegrown hidden gem serves a fine selection of signature small plates, creative sashimi offerings, and traditional nigiri using the freshest ingredients. Highlights include the japanese potato salad, sashimi tartare, black cod, bluefin tuna, and yellowtail roll.
    The redesigned space features a moody atmosphere blended with sleek and minimalistic interiors reminiscent of alleys of Japan. The counter seats are perfect for solo dining or for guests who want front-row views and enjoy the culinary artistry and action up close.

    Hawkerboi

    What started as one of Dubai’s most sought-after supper clubs has now gone on to open its own restaurant. From first hosting in secret locations around Dubai, this highly-anticipated venue takes inspiration from the founder’s life in the Far East. Known for his concealed identity, Hawkerboi is considered the Banksy of Dubai in the culinary world and never fails to amaze his diners with exquisite dishes that represent his travels. With delectable dishes such as Wagyu Skewers with Peanut Nahm Jim, Charcoal Short Ribs and more, the space is designed for with red neon piping to balance the underground foodie community in the city. Designed by its parent company EatX, this space projects a vast open kitchen by mastering the art of balance and theatre. Located at The Park, Jumeirah Lake Towers, the restaurant is open from Sunday to Thursday 7pm to 10pm and Friday and Saturday 7pm to 11pm.

    Honeycomb Hi-Fi

    Given the title of Dubai’s first listening bar, Honeycomb Hi-Fi brings to life a lavish record store, a High-Fidelity sound system, warm and minimal interiors designed for quality acoustics, and an izakaya kitchen to round out their vision. With a casual Japanese menu inspired by a traditional izakaya, guests can indulge in hot, binchotan grill and rice/noodles sections with a variety of dishes to share. By delivering a modern twist on Japanese classics, guests can dine at this luxe haven from 7:30pm to 3am on Friday and Saturday and Sunday, Tuesday, Wednesday and Thursday from 7:30pm to 2am and visit this hidden gem in Pullman hotel.

    WAWA Dining

    Located on the ground floor of the Golden Tulip Hotel in Al Barsha, its entrance is straight out of Tokyo and designed to resemble a traditional storefront with lanterns, handwritten signs, and warm colours. WAWA takes a modernized touch on Korean-infused Japanese cuisine with a varied selection of spirits, Maki, Jako Fresh and WAWA platters. This low-key spot is definitely a must-visit.

    Adaline

    This classic Italian restaurant and supper club has opened in DIFC, Dubai. Adaline is set to transform Dubai’s dining and nightlife scene with their vibrant dinner experience. The restaurant is a cornerstone of Dubai’s exciting social scene, seamlessly blending old-world charm with modern flair, and reimagining the allure of a grand, intimate dinner party.
