Weekend treat
“I am not a chef, but a storyteller creating memorable experiences for our guests” says chef Sandro Falbo of The One&Only Palmilla. Here he shares two of his favourite recipe — The Pizza Pazza.
Who, really who doesn’t enjoy a slice (or two) of pizza? Well then, get your ingredients together and begin.
Pizza Pazza
250grams Flour
3.5grams Fresh yeast
3.5 grams Salt
2.5 grams Sugar
90 ml Water
35 ml Milk
3 ml Olive Oil
1 Egg
Pour water into a large bowl; sprinkle with yeast and let it sit until foamy, and then let it stand for about 5 minutes. Whisk in sugar, milk, eggs, olive oil and salt. Add flour and stir until a sticky dough forms. Mix the dough for 10 minutes until smooth. Cut dough into 95 ml rolls and refrigerate for 4 hours. Roll out the dough, add topping ingredients. Cook in oven at 250˚c for 10-12 minutes.
1 cup of boiled beans (frijoles)
1 cup of bean paste
2 cups of chorizo (or choice of meat)
2 tbsp / 30 ml of olive oil
Cilantro
Add one cup of pinto beans as the base. Add one cup of mozzarella cheese. Top the pizza with boiled beans and a cup of chorizo (chorizo can be substituted with any kind of meat). Cook in oven for 10-12 minutes at 250°. Once the pizza is ready, add 2 tablespoons of olive oil and fresh cilantro.
The best way to tell if the pizza is fully cooked is to look at the bottom of the crust. A golden and crispy crust indicates the pizza is ready.
