    10 Insanely Easy Vegetarian Meals I Rely on During the Week

    One of my goals for 2021 was to make myself more well-balanced and nutritious meals at home. I want to add more fruits and veggies to my everyday diet, rely less on processed and packaged foods, and make simple swaps for healthier versions of some of my favorites (such as pasta and tortillas).Although I already enjoyed cooking for myself, I knew that I just did not do it enough. I also have been a vegetarian for over 10 years, so I wanted to challenge myself to try some new recipes. I am very proud to report that all 10 meals I’m about to talk about were made within a week—so far, so good on that goal!
    I also want to take this time to thank the four most important things in my life right now, especially when it comes to achieving this goal: my air fryer, Trader Joe’s carb-savvy tortillas, my new Always Pan, and chickpeas. 
    Whether you are a vegetarian yourself or just need some inspo for the new year, check out these 10 incredibly easy (and delicious, if I do say so myself) vegetarian meals that I rely on during the week:

    1. Buffalo Chickpea Salad Wraps

    This is a new favorite of mine! Chickpeas are a super easy way for vegetarians to include protein in their diet, and they are also incredibly versatile—making them a non-meat-eater’s best friend.
    To make these salad wraps, mash up clean and dried chickpeas in a bowl and mix in plant-based mayo, buffalo or hot sauce, salt, pepper, and garlic powder. Spread on the tortilla of your choice (I love the carb-savvy ones from Trader Joe’s), and top with lettuce, avocado, onion, and feta cheese for the perfect WFH lunch.

    2. Burrito Bowl

    Looking at this photo makes my mouth water. Start by cooking onion, frozen corn, and peppers in a skillet with your favorite seasonings. When that’s finished, add the mixture to a base of brown rice and black beans (if you’re like me you’ll just get the microwave options), then add the toppings of your choice. I usually go with avocado, plain greek yogurt (as a sour cream substitute), chihuahua cheese, and a couple crushed tortilla chips. 

    3. Oatmeal with Peanut Butter and Banana

    This is a simple one! I make plain microwave old-fashioned oats with unsweetened vanilla almond milk, and then mix in agave syrup and cinnamon once they are cooked. I top it off with natural peanut butter and a banana for extra protein and deliciousness. 

    4. Cauliflower Gnocchi with Pesto, Goat Cheese, and Balsamic

    A true classic and a lazy girl’s best friend: Trader Joe’s cauliflower gnocchi. I make mine in my air fryer (if you’re not doing this yet, it will change your life) with a dash of olive oil, garlic powder, and Italian seasoning, and then simply mix it up with pesto, balsamic glaze, and goat cheese crumbles. YUM. 

    5. Tofu Lettuce Wraps

    My mom and I have been making this recipe for years, and it just continues to evolve. I’m very excited to share that I recently cracked the code on how to get your tofu as crispy as possible, and the answer is two simple words: air. fryer. Seriously, this tiny little appliance made my life 1000x better, and if you don’t have one yet, WYD?!
    To make these lettuce wraps, air fry your drained and cubed tofu with your teriyaki sauce of choice and prepare some plain brown rice. You could also make some veggies to add if you’d like. Then add everything to a butter lettuce cup, and top with a bit of sriracha mayo and crispy chow mein noodles—or don’t, if you’re feeling extra healthy. 

    6. Spicy Potato Tacos

    As if 2020 wasn’t bad enough, it was also the year that Taco Bell decided to take potatoes off the menu and break my little vegetarian heart. So if you’re in the same boat as me and still mourning that loss, this is a special treat for you: at-home spicy potato tacos.
    I make these by air frying (yes, I’m using it again) cubed baby potatoes seasoned with salt, pepper, olive oil, garlic powder, chili powder, and red pepper flakes. The potatoes by themselves are delicious, but I like to put them on a low-carb tortilla and add a sprinkle of cheese, avocado, plain greek yogurt, and hot sauce to pretend I am at Taco Bell. I also like to tell myself these are a healthier version—so, you know, if they’re not, please don’t tell me that. 

    7. Lunch Snack Plate

    This is what I like to call lazy lunch. Basically, it consists of anything in my fridge that needs to be eaten. For example: on the day I took this photo, I had some leftover buffalo chickpea salad mixture on a lettuce wrap as well as a side of veggies and crackers with plant-based cauliflower tzatziki dip. 

    8. Breakfast Tacos

    I would seriously eat these tacos every day if I could. They are super simple: scrambled eggs, veggie sausage (I prefer MorningStar), goat cheese crumbles, cherry tomatoes, avocado, and hot sauce on low-carb tortillas. 

    9. Mediterranean Chickpea Salad

    Ah, chickpeas, we meet again. This very easy mediterranean salad is just a mixture of washed and drained chickpeas, avocado, red onion, cherry tomatoes, and feta cheese. For dressing, I drizzle the mixture with olive oil and red wine vinegar and season with salt, pepper, and garlic powder. You could also add cucumber and kalamata olives—I was just out on this day!

    10. Veggie Fried Brown Rice with Tofu

    I’m a huge fan of using leftovers, and this dish is perfect for that. I had some leftover tofu and brown rice from my lettuce wraps, so I fried up some veggies—in this case, peppers, carrots, corn, and red onion—then added the rice, tofu, a fried egg, and some more teriyaki sauce all in the same pan.  More

    Kim Kardashian and Kanye West are reportedly meeting with divorce lawyers

    While split rumours have been circulating about Kim Kardashian and Kanye West for the last couple of weeks, it’s been reported no final decisions had been made on their break-up and that the couple had been attended marriage counselling settings.
    However, it seems the pair are reportedly set to meet with divorce lawyers.

    Per People magazine, it’s been claimed that the power couple, who have four chidlren together, “completely” stopped going to couples counselling togehter.
    “[West] is talking to divorce lawyers this week,” a source told the publication.

    According to Entertainment Tonight last week, a divorce is inevitable for the couple as the beauty entrepreneur is wanting to focus on “a lot of amazing things that are coming her way”.
    “Kim has tried everything she can to make things work with Kanye but it’s not working,” a source told the publication. “Kim has held on to the relationship in hopes of a change and for the sake of the kids, but all signs are pointing to divorce.”
    The couple reportedly spent the festive period separately, with West residing in Wyoming on their ranch, while Kardashian was with her family and their children in Los Angeles and Lake Tahoe.
    Difficulties in 2020
    Last year was a particularly difficult year for West’s mental health. In the latter half of 2020, West began posting a series of erratic Twitter posts regarding personal matters, his family and more.
    Following this, there were various reports that the couple’s marriage was strained but Kardashian was determined to make it work.

    At the beginning of August, the reality star even took to Instagram to address the erratic behaviour her husband has been showing and also addressed his bipolar disorder.
    “As many of you know, Kanye has bipolar disorder,” she began. “Anyone who has this or has a loved one in their life who does, knows how incredibly complicated and painful it is to understand.”
    She continued to say, “I understand Kanye is subject to criticism because he is a public figure and his actions at times can cause strong opinions and emotions.”
    The 39-year-old went onto highlight how the loss of his mother has affected him, as well as struggling with mental health issues has put “pressure” on him.
    “Living with bipolar disorder does not diminish or invalidate his dreams and his creative ideas, no matter how big or unobtainable they may feel to some,” she said. “That is part of his genius and as we have all witnessed, many of his big dreams have come true.”
    She asked that everyone give “grace” to the individuals, including her husband, who are struggling with mental issues, and also asked for “compassion and empathy” during this trying time.
    Kardashian and West are still yet to make a public statement about their reported split.

    Gigi Hadid reveals the exact moment she found out she was pregnant

    Gigi Hadid and Zayn Malik announced the birth of their first child, a baby girl, just over four months ago.
    While the new parents have kept many details surrounding their daughter under wraps – including her name – Hadid has begun to open up slightly more about her pregnancy journey.

    Most recently, the supermodel revealed exactly when she was expecting her baby girl.
    Earlier this week, the 25-year-old took to Instagram to post a throwback photo of when she first found out she was pregnant during Paris Fashion Week at the Jacqquemus runway show.

    Then, on Twitter, a fan asked if she knew she was already pregnant.
    “Yes, I found out the day before the Tom Ford show,” Hadid responded, quoting the fan’s post. “I was so nauseous backstage but I learned I could kinda control it if I continuously ate, so my mom would pack me snacks before each show.”

    The pregnancy announcement
    Hadid’s pregnancy was first reported on back in April 2020. However, the model first spoke of her pregnancy – news which was revealed in the press and not by Gigi or Zayn – during a video call appearance on The Tonight Show with Jimmy Fallon, admitting they would have liked to reveal the news on their “own terms”, but also thanked everyone for their congratulations.
    “Obviously, we wish we could’ve announced it on our own terms, but we’re very excited and happy and grateful for everyone’s well wishes and support,” she said.
    Welcoming their new baby girl
    Hadid and Malik announced the birth of their first-born via social media back in September.
    The new mum took to Instagram to announce the news shortly sharing a sweet photo of her daughter’s hand.

    “Our girl joined us earth-side this weekend and she’s already changed our world,” she captioned the photo. “So in love.”
    As for details on their daughter, the couple have been keeping the name of their baby girl and her face private for now.

    The UAE has reached a major global milestone in COVID-19 vaccinations

    As countries are beginning vaccination processes against the COVID-19 vaccine, the UAE has already reached a major global milestone.
    With the aim of vaccinating half of the population by March, the nation now ranks first across the globe in the daily distribution of doses of coronavirus vaccines.

    According to the National Emergency Crisis and Disaster Management Authority (NCEMA), the rate for vaccinations over the last seven days in the UAE has been 1.16 per 100 people.

    Reaching another milestone, the UAE has also now administered over two million doses of COVID-19 vaccines.

    Sinophram vaccine
    There are currently two vaccines available in the UAE, the first to being the Sinopharm vaccine.
    The vaccine underwent clinical trials in Abu Dhabi during summer last year and it was confirmed by health authorities saying that the “analysis [from the trial of 31,000 people] shows no serious safety concerns”.
    High-up government officials including His Highness Sheikh Mohammed bin Rashid al Maktoum, the Vice President and Prime Minister of the UAE and the Ruler of Dubai, Her Excellency Noura bint Mohammed Al Kaab, the Minister of Culture and Youth and more have received the Sinopharm vaccine.
    Pfizer vaccine
    Then, at the end of December, the COVID-19 Pfizer-BioNTech vaccine was approved to be administered in Dubai.
    After undergoing numerous clinical trials, the vaccine has been found to have 95 per cent efficacy. Recently, the DHA outlined exactly who is currently eligible to receive the vaccine.
    The vaccine has already started to be rolled out, with some government ministers already receiving their first doses. As of today, this now includes Director-General of the Government of Dubai Media Office (GDMO) Her Excellency Mona Al Marri.

    In pictures: Sheikh Hamdan’s spectacular shots of Dubai engulfed in fog

    The internet hasn’t been able to stop talking about the fog that hit the UAE this week.
    In particular, Dubai has been engulfed in some heavy fog making for some quite epic photographs, which many have shared on social media including His Highness Sheikh Hamdan bin Mohammed bin Rashid Al Maktoum, the Crown Prince of Dubai.

    A couple of days ago His Highness shared a spectacular video of the early morning fog which included some views of iconic landmarks the Burk Khalifa and the Burj Al Arab.
    Now the Crown Prince of Dubai has shared even more shots of the fog from today, this time in photo form.

    The first snap looks directly down on the rooftop of the Burj Al Arab, which is encased in a sea of mist and clouds. The second one showcases another Dubai skyscraper, the Burj Khalifa, with only the very top of the world’s tallest building being visible amongst the clouds and fog.

    The other shots shared show Dubai in the dark with the thick fog encasing even more skyscrapers.
    Those living in the UAE can expect the fog to be a weather talking point for a little longer as the National Centre of Meteorology has forecasted the mist to stay for the rest of the week.

    However, by Friday the fog is expected to have cleared.
    As for temperatures in Dubai, expect it to get quite chilly during the evenings with lows of 14 degrees celsius.

    The incredible Malala Yousafzai to headline the Emirates Literature Festival

    Watch: This iPhone hack has been labelled ‘game-changing’ by Apple users

    With advancing technology, there’s more and more added features to any gadgets you own.
    Tech giant Apple is well-known for this, continuously adding new hidden shortcuts and features to iPhones and the latest one has just gone viral on social media.

    While we all know the front of the iPhone is where the action happens – it’s where everything is controlled, of course. But did you know that the simple apple logo design at the back of the iPhone is actually also a control button?
    In a video which has now gone viral – and left many gobsmacked – Instagram user Tenille Serpa shared that once you activate the control settings the Apple logo on the back can take screenshots, activate Siri and more which a double or triple tap.

    It’s simple to activate. Firstly, you need to go to your settings, then scroll down to the accessibility tab.
    Under this tab, you’ll find a ‘touch’ option which you need to click, then scroll down and click on ‘back tap’ and then select the ‘double tap’ option.

    There are an array of functions, this trick can be used for app switching, control centre, home, lock screen, mute, notification centre, reachability, screenshot, shake(undo), Siri, spotlight, volume down and volume up.
    In the comments section of the video, the hack has been labelled “game-changing” and “mind-blowing”.
    However, just keep in mind how you hold your phone if you turn the settings on, it could take a while to get used to!
