Tough week? Tough day? Before you kick off your shoes and start the endless scroll for dinner inspiration – stop right here. This macadamia-crusted chicken is the weeknight recipe you didn’t know you needed and once it’s in your rotation, it’s staying there.
Created by MasterChef South Africa winner and influencer The Roasted Dad, in partnership with Love Macadamia, this fresh, flavour-packed dish comes together in just 30 minutes in the air fryer (or just as easily in the oven). The best part? The only real effort happens upfront during prep. After that, the oven does the heavy lifting while you decompress.
Beyond the golden, crunchy crust and that zingy lemon and herb macadamia drizzle, there’s a genuinely good reason to be cooking with macadamia nuts more often. They play a key role in supporting heart health, calming inflammation and working to support your body from the inside out. Add in a solid mix of antioxidants, fibre and essential nutrients and what looks like a simple weeknight dinner becomes a small but meaningful choice for your long-term health and well-being.
Wholesome, quick and honestly a little impressive for a Tuesday – this one’s for you and the whole family.
